I found a part packet of bought sponge fingers lurking in the cupboard I also have 3 teeny and 1 large orange that are going a bit dry, going to see what else I can find to make something resembling trifle for OH, in stock is sherry, milk, custard powder, LF cream and I seem to remember a tin of mandarin oranges lurking in there too (I don't like them and OH keeps forgetting to use them even tho' he requested them.

    Hi all

Another week of 'lets get some space in the freezers'. Eating alone tonight and it's meat free monday, so i found a tub of mash in the freezer and I am going to make potato cakes which I'll have with eggs and beans..

All the other meals this week will be from freezer stores. it is easing a bit but a lot of it is meat based where we are trying to be more veggie. No matter, none will be wasted but it will take longer to use up. I think this week we'll have a meat based meal (either beef stew that's already made) or bolognaise (though I may turn that into chilli); there's a veggie casserole or two and some breaded fish. DD has decided that breaded fish is something she really doesn't need to eat (she's trying to be more veggie, without the pressure of going the whole hog) so OH will probably have that and I will have some salmon. So tomorrow will probably be a veggie casserole, possibly made into crumble; weds will be the breaded fish / salmon / cauli cheese bake with the same veggie accompaniments and thursday will be the chilli / bolgnaise as OH and I are out after tea.

Which brings us back to Friday when we can have yet more left over takeaway / restaurant curry :rotfl: It seems to be a bottomless pit.

May have been posted before but I haven't seen it...

Sliced bread going out of date? Going hard ect?

slick it on the radiator to fully dry it, or in the oven on a very low setting with the door open.
You can then stick it in a blender or use a hand blender to turn it into bread crumbs for stuffing or coating chicken and fish. It can be stored in the freezer in bags or tubs. As long as it was fully dried before freezing, it is good for immediate use out of the freezer.

Better still make a bread and butter or bread pudding and eat the darn thing rather then filling the freezer with more bits to use up :rotfl:
  • I had a slice of lemon cake given to me by a friend on Saturday that I hadn't eaten, so tonight I made some custard up, warmed the cake a little in the m'wave topped it with custard and finished it off for pudding after dinner:) enough custard left for another day cold and in the fridge.Nothing goes to waste here .Snow is getting quite thick ourside at the moment, glad I am in the warm Hope they have some night shelters open for the homeless tonight, locally our council will only open them after three consecutive nights below freezing Grr
  • Hi all,
Haven’t posted for a while but have been reading. I think I will try the steam tip for my next Focaccia.

 at myself as I had to throw out a pot of buttermilk as it got lost in the fridge

However, Monday night’s dinner was a new (to me) recipe for mushroom & lentil pie which I halved (as I didn’t know if DH & I would like it :o) Recipe called for 350g shortcrust pastry - cut off 225g from the 500g block, then decided to make some jam tarts so I have 130g left which I will roll thinly & make a small pizza for lunch. Still a third of the pie left so will have that with swede & potato mash & petit pois for dinner. This will use up the half a swede in the fridge & I will cook all the potatoes as they have started to shoot:( (Forgot to say, DH was a fan of the pie - wants me to make it again:o - but I was ambivalent :o)

I will try to post every couple of days & keep a closer eye on fridge contents!

I have a sharpie pen and write the use by date on the front of containers when I first put them in the fridge. Find it easier to see when things need to be used

Mushroom and lentil pie? Recipe please!
  • Yesterday I pulled everything out of the fridge and gave it a really good scrub which was very satisfying. I made a big pot of soup with the saddest looking items (a couple of parsnips, two apples, a carrot, a head of lettuce and a broccoli stalk) and put everything back neatly so I can see what I have. Well, if I can see past the 5 tubs of soup of course. I think it'll be soup for lunch then.

I have a few things that need eating in the next day or so I'm planning soup and toast for lunch, some leftover veg dhansak for my tea with naan using some dough I took out of the freezer at the weekend that we didn't use all of. The five year old will have a hm pizza using some leftover dough which is also from the weekend and I'll top it with a little veggie Bolognese (also leftovers), some peppers and cheese.

I think I'll be drinking lots of nice hot cups of tea today. The walk to drop boyo off at school was chilly and snowy. He loved it though!
  • Hi everyone,

silver-oldie, thanks for the great idea.

bouicca21, it was a Jack Monroe recipe from her website - cookingonabootstrap.com
although I did tweak it a bit - only did a half of the ingredients except for the ale & carrots & I added a lo parsnip & an extra mushroom. Don’t think mine came out as cheap as hers though:o :rotfl:

Will post later re the hm pizza we had for lunch.

That pie looked lovely on Jack Monroe's website.. I may make it myself at some point soon.

I liked the idea of using the little cutters as a pie crust.

today I pulled out a veggie stew / casserole from the freezer which i will top with a cheesy crumble. OH and I will have that with roasted broccoli - DD doesn't fancy it (even though she is the veggie LOL) but there isn't really enough for 3 anyway I'd have had to add to it if she'd wanted it.

The potato cakes were lovely and I had two last night with eggs and beans and then two more for lunch with eggs again. A great way to use up left over mash
