  • Tonights dinner was some HM roasted tomato soup, made from the glut of tomatoes that OH picked at the weekend. I also made some garlicky croutons with the leftover chunk of bread we got YS that was otherwise destined for the bin.
    Pudding is apple, pear and quince crumble. All the fruit was from the garden so the whole meal was very cheap and nothing has been wasted.

    I have enough left over ham from the pice I cooked for Monday's lunch with my friend to do me tonight for dinner with some mashed potato and pickle. What ever's left from that will go into an omelette with some mushroom stalks for tomorow's lunch

    My little piece of boiled ham slow cooked has done Mondays lunch for two of us yesterday's lunch with crackers and cheese ,tonights dinner with mash etc and tomorrows lunch in an omelette
    so five meals made from a bit of boiled ham which cost me £2.19 in Aldi's :):):) It was on offer, and I had bought and froze it ages ago :):)
    My best bargain for a long time I bought a pack of peppers on Monday and some of them will be used in salads but the green one I will make the stuffed pepper and diced mushroom meal with which is so tasty and uses up the big green one in the packet which always seems to get left over :):)By the time I have stuffed it with chopped mushrooms and cheese and a dollop of chilli sauce and topped with dried stuffing mix then cooked in my remoska it make an excellent replacement for meat in a big salad and is very filling :):)

    Tonight's meal will be some fish from the freezer and some left over new potatoes from last night and the last of my sweetheart cabbage steamed with a few carrots.

    Really pleased at how I have been making do and staying away from the supermarkets this week and hopefully next week as well as I have more than enough to last me for the moment .

    I made a nice traybake today and drizzled some lemon icing over it, used up the slightly wrinkled lemon at the bottom of the fridge and my cake tin now has enough to keep me going over the next few days at least :):)

  • Feeling quite proud of myself this week - nothing thrown away until today .................... and that was a 'lost lemon' that had totally dried itself out - retrieved from behind the m/wave :eek:.

    After supplying 'The Salad' for a shared funeral buffet, there was quite a bit left over. I've done my best with it all week - very good for my own diet ;).

    The final effort came yesterday morning when I turned the remaining tomatoes / mixed peppers / sliced red onions / sliced spring onions / sliced radishes into a 'pseudo Bolognese Sauce'.

    Used most of it last night with some Minced Beef and Spaghetti - with the last bit put into a container to freeze as a future Pizza Sauce :j.

    This afternoon, I used up half of a 'mini honey' (from my last b/fast visit to Hospital Costa for porridge) to have with a pot of Green Tea and the last chunk of lemon from the fridge - very civilised with my china cup and saucer :D.

    Reminder to self - move the microwave right out in future :doh:.

    Sound delicious , well done,and as you said hit the spot and filled a hole ,that's the idea and using up stuff as much as possible, and even turning stuff into something edible will help to streetch out the housekeeping.

    eeven a simple jacket spud is enhanced with a bit of cheese and some baked beans and a small salad into a filling feast for very little cash.

    I sometimes cook a jacket and then scoop some out ,bung an egg into the hole and replace it with the scooped out bit and return to either my remoska or the microwave for a few minutes to cook it, great little lunch with just a spud and an egg :):)

    Tomorrow I have my in-laws over for dinner.
    Started: homemade tomato and basil soup from the freezer
    Main: ys roast duck from the freezer, stuffing, braised beetroot leaved (freezer), butternut squash (freezer), runner beans (from garden) carrot ( from in-laws allotment), roast potatoes
    Pudding: homemade strawberry ice-cream ( strawberries from the freezer/ home grown)
    Afternoon tea: homemade chocolate fudge cake ( using up cocoa powder and blackcurrant curd)

  • DSis made shepherds pie for Saturday & Sunday night’s dinner - there was a portion left over which I was looking forward to having for Monday’s lunch BUT :( DSis gave it to her ‘pet fox’ :(

    Oh dear Mrs SD how annoying, still Mr Reynard was probably happy at least.

    Got some sausages out of the freezer to have with new potatoes and veg for dinner tonight, slowly working my freezer down ,but it takes ages to do I am not buying any more meat or fish until all that's inside it has gone, it really does need defrosting. So my menus are going to be ...a bit of a hotch podge over the next few weeks. Its got to be defrosted before Christmas. There is a bit of wriggle room ,but not a lot.

    Right must get a move on as its book club this morning

    Have a good Monday chums and keep wrapped up and warm if possible its a bit nippy out
