    I got seduced by the glossy sleekness of the aubergines, bought 4, need ideas for using up, don`t mind preserving either, could dry or freeze.
    Do I need it or just want it.
  • Aldi have chestnut mushrooms on offer 59p so I'll get some and make tomato and lentil bolognese, use up some of the lentil 'mountain'

    Any suggestions please, I have 4 tins of Five beans,usually use with couscous but would appreciate suggestions?

    Aubergine pasta bake. Cook some pasta. Slice and fry the aubergine(s), make a simple mince and tomato sauce, chop some chorizo, chop and mix mozzarella with some grated pecorino. Layer in a baking dish. Bake. Simples.

    I use mixed beans to do the Jack Monroe goulash. Only spice used is a little smoked paprika. I usually serve with rice.

    I make a sort of lasagne using slices of aubergine instead of pasta. I use all sorts of veg in the tomato sauce. Every time I make it is different.

    Have also made a dish my dad used to call rounders which made a little mince go a long way. It's just layers of different vegetables with a mince layer in the middle, for example layer of potatoes at bottom, layer of onions, layer of sliced aubergines, layer of courgettes, layer of mince, then more layers of veg, pour over some stock, top with a layer of potatoes. Either spray oil over or dots of butter. Obviously needs a deep dish (or a deep cake tin would probably work, preferably loose bottomed and lined with foil to make it easy to remove).

    Made some pasta sauce using up mushrooms, pepper, onion from the fridge plus tomatoes from the garden and a fresh aubergine from the garden.

    Made some tomato ketchup. (Tomatoes from the garden) It was a lot easier removing the skins first. Had all other ingredients in the cupboard already.

    Made a rhubarb and crumble with leftover stewed rhubarb from the garden.

    Had suetpudding beef in ale with butternut squash, courgette, carrots and runner beans - all veggies home grown. Saving plastic containers that had the suet puddings in. Will now make own suet puds.

  • I grow what I can and freeze and dehydrate it but also buy rtc bags of salads in Lidl for 20p sometimes. I only use a little of the bag which I can justify in terms of cost, but not the waste so I have now started drying what is left as the dehydrator is running pretty much constantly at present and in daylight hours it costs me nothing due to solar. I can grind up the resulting leaves and add them to smoothies or as a base for vegetable stock.

  • OH came back from asda on Friday with a bag full of YS veg. 4 packs of tenderstem broccoli, 4 bags of kale, 2 gags of sugar snap peas and some spinach. There was no way I would use it all before it went off so it got blanched and frozen into 3 bags for ready made stir fry mixes.
    Another bulk lot of courgettes, onion, peppers and tomatoes got roasted today so will incorporate that into meals in the week.
    I made some jam yesterday so today I sorted out the cupboards to see what I had.
    I've got 33 jars of jam and 17 jars of chutney!!!!! I think out of the 50 jars about 80% are this year's. The hot weather didn't seem to have much of an effect in our garden!.
