I didn't use the sausage yesterday as my husband wasn't hungry. I am about to have it on a toasted bagel with ketchup.I made some ready meals for myself, only took minutes. Cooked pasta mixed with chopped cougette, LO red pepper and 2 cubes of hm frozen thawed pesto plus extra olive oil. Topped with browned slices of aubergine, slicedtomato and a crumbled circle of goats cheese on each portion.
I am having pesto pasta with grilled courgettes, aubergine, tomatoes and peppers for dinner tonight.:)0 -
Better late than never!
Sudden plan change after yesterday's rain, forecast was good and wind speed lower, decided to go down the seafront for the Kite Festival
Porridge breakfast as usual, then Park & ride plus a walk to the front.
Very pleasant day, had a brief rain shower but that was it
Mid morning cuppa in D Day cafe, nice pot of builder's but resisted cakes
Well past lunchtime before back on road again, into a name changed Garden Centre to see how or if changed.
Had a late lunch, cheese & ham baguette, in there. Came with side salad blob & some crisps, ample for me
Unfortunately the YS had even spread there
Came away with YS posh choc, was over £3 non YS, £1 YS, rip off but I expect it'll be lush
Plus tin of YS biscuits, ginger filled & with extra thick choc coat, over £12 no YS, rip of, who'd buy biscuits at that price, even as gift?
£3 YS, still expensive but I'll try them once
I'm still full from lunch baguette, so no idea what I'll eat later, maybe nibble a posh biscuit?

I spent several intense hours digging with a pry bar and other tools today, such hard work on a new build garden. It lashed down, was torrential afterwards and none of my holes filled with water ie they are drainingTwo other areas have yellow puddles so I know where I need to work with my new 36" gorilla bar from screwfix tomorrow. Everything under the soil is yellow and very sticky and full of difficult and heavy rocks
I went in after a good 5 hours and had several glasses of water and a couple of boiled eggs and some cherries, went to the tip with a busted wheelbarrow and decided that I need to eat properly, was tempted to have biscuits, cake and ice cream. Lamb chop and 4 veg went down a treat. Got to concentrate on using fridge veg and freezer veg this week, need to use them up. Three days rest coming up with an eye test and a hair do included. Fingers crossed for the eye test, I have the coloured retina photo, its a scary picture tbh but shows changes, usually now age related
Went to costco yesterday after a trip to wales, got some nice plant based foods, falafels and the like ie easy peasy food0 -

Sounds like back breaking work pattypan but with good results. Nope after a session like that cake isn't the answer, I'm glad you had a proper meal:).
The rain hasn't stopped all day but it didn't deter my sisliterally splashing her way up my garden for a cuppa, a catch up and a hand with some finance stuff (undertstanding figures are not her forte, she says I got her share:rotfl::rotfl:). After she left I tackled freezer 2 which despite being bigger is an easier job for me as I can pull a chair up to it. No UFOs discovered but did find a couple of packs of smoked fish that had lodged at the back of the awkward bottom shelf that I must have missed before (several times:o:o). I've no idea how old they were but from pre inventory days as they are from a local fishmongers that closed in 2016:eek::eek:. Needless to say they've been binned! My inventories are now up to date and while sorting them out took longer than I thought, it should be worth it.:)
My visitor & freezer sorting meant that my plans to make a potato & courgette bake haven't happened. While I do tend to eat lateish by the time I had prepped and cooked it goodness knows when it would have been ready so that's been shelved. I'll see how the week goes and will either make it on Tuesday or use the ingredients to make some soup. Looking at the forecast and the fact I have the dentist on Wednesday, soup may well be a more sensible option as I have chipped a filling and if they aren't busy they might just fix it at my check up. Instead of the bake I'm having new spuds and green beans with the hake/parma ham & roasted tomatoes, I'll nuke steam the spuds then pop in the tray with the fish to crisp up a bit. For lunch I used the LO tofu to make a fish finger -style sandwich with lettuce & mayo and had that with cue sticks and a peach. The tofu crisped up beautifully popped in the oven for 10 minutes. It was really tasty and one I'd definitely make again:). Tomorrow I'm off for lunch with some friends I used to work with to the new tapas place in town, I'm hoping the food is still as good but the service a tad less clunky than my previous visit a month or so ago.0 -

Caronc did you coat your tofu in normal flour or cornflour? Last time I used corn flour but used more oil then I wanted to crisp it, although it was very nice and I have some in the fridge to do this week or did you bake it?
I must confess I've put off sorting the freezer, I found numerous other things to keep me busy and tried to ignore it every time I went in the kitchen :cool: needless to say my meal plan for the week hasn't been completed yet either. Maybe tomorrow night

After marinating the tofu I coated it in mix of 1tbs of flour, 1 tbs of cornflour, garlic powder, 5 spice, salt and white pepper. I fried it briefly on all sides in a little oil then baked for around 15 minutes in a fairly hot oven. A bit faffy but it did work really well.:) I was surprised how well reheating it worked, I thought I might end up with hockey pucks:eek:.

Thanks CaroncI hadn't thought of combining frying and baking, I did try it in the air fryer but it didn't work, not enough fat I think. I'll also try the mix of flour and report back

I think I need to use more frozen and fridge veg and I have a deep frozen gammon hock. Pea and ham soup for the freezer sounds good, dutch pea and ham soup for me, dried peas, leeks and carrots, bay leaf etc. I like having good soups in the freezer. I live a few minutes walk from a very good (hearsay) chippie, have not tried them yet. I don`t want to go down the slippery slope0

Yet more rain, just drizzle. If it stops I need to potter in the garden, check the plums etc. Thinking I may chance a fresh sowing of French beans, I saw Monty D on GW sowed some, worth a try because my climbing ones were rubbish this year, maybe too much heat?

I've taken a couple of bangers out to defrost for tonight. I've half tin of beans & some eggs that need to be used, looking like bangers, eggs, chips + beans, maybe a grilled tom to attempt a healthier option

Def chips, I do them in my Actifry.
