Cooking for one (Mark Three)

  • Duly did that "sorta stew" with kidney beans/tomatoes/spinach/etc, served on courgetti. Added a bit of that dried mushroom powder (as per earlier suggestion from Caron) along with quite a variety of other flavourings. 'Twas nice:). Second helping for tomorrow.

    Tried out a recipe for waffles - duly baked in oven - as I don't have a waffle iron. Verdict - well = I ate them. But I ain't sure about baked waffles. I have decided I don't like vanilla (after putting some in - as per recipe). Vanilla essence duly chucked.

    Tried out the barista version of oat milk. Don't know what the difference is - but it does work as "milk" for coffee and it's also more pleasant to drink on its own than the standard variety (even though done by exact same manufacturer). Shall be buying that again.

    It's not rained here since the weekend.

    I've got to that point where I've been going out and buying food ... leaving a trail of uneaten food behind me...

    So I had the last crust of bread topped with the leftover beans (3 days I think they've been in the fridge) topped with cheese for tea.

    I've still got a portion of chilli. I might have that tomorrow, or freeze it.
    Two slices of corned beef (today's date) need to be eaten - I'll do that tomorrow.
    About 6 tomatoes lurking - tomorrow with the corned beef.
    And there's 1/3rd of a cucumber - most of that I'll eat tomorrow.
    I boiled an egg earlier, that's in the fridge - I'll toss that in with the salady bits tomorrow.

    I'm sure, if I look, there's something else lurking/to be used up.

    Stew sounds tasty MTSTM - glad you got some mushroom powder, I'm sure you'll find loads of uses for it. I always think dried mushrooms in any form add such a flavour boost:).
    I'm not keen on sweet waffles I'd much rather have a crepe but potato waffles are definitely a (not too) guilty pleasure :)

    I can completely relate to your description of a trail of food:o, not quite sure why as I've been meal planning around what I have in but I think some unplanned LOs over the past few days and underestimating how much I'd be eating from the garden have contributed. I think tomorrow will need to be a "shelve the meal plan" and eat things up day.
    I could use up lurking corned beef and cooked spuds tonight but there were spuds in the salad at lunch and much as I like them once a day is enough for me. Corned beef & stuffed pasta doesn't appeal though so I'll probably make some kind of stew/hash with it & the spuds tomorrow.
    I'm invited out to friends on Saturday so might make some filo bites to take for a nibble. If I do camembert & cranberry ones that would use up the LO filo, some of the cheese and a bit of the jar of cranberry sauce that's been there since Christmas.

    There's salad LO from lunch so that can be lunch tomorrow, but I might make a pot of soup to make a dent in the veg.

    I'm off now to turn the roasted toms into tom sauce, there will be some for the freezer which I'm pleased about. That's the sort of "spare" food I like:).


    My list of use ups not covered in the above are:-
    1/2 tub of Greek yoghurt
    1 cucumber picked yesterday

    romaine lettuce
    two red peppers

    gouda cheese
    chorizo
    eggs
    few rashers of bacon
    cheddar
    an avocado
    cream cheese
    1/2 a block of feta

    Suggestions on a postcard please....:rotfl::rotfl:


    Thankfully none of these are in immediate danger of going off:cool:
  • Bacon, cream cheese and peppers maybe used as sauce-to-go with pasta ingredients?

    Avocado - either avocado toast (one of my staples I know) or a sort of chocolate mousse pudding (chocolate, avocado etc).

    Thin the Greek yogurt down a bit, chopped cucumber in it = curry accompaniment.

    Avocado toast is one I've not done - tend to use them in salads or dips. With all the toms I have - could be a lovely breakfast or lunch.:D

    I just need to be quite disciplined when I do my next meal plan & use up the lurkers.:cool:

    You do need to get some chips though, to go with it. Quiche isn't ever quite complete without chips.

    Quiche is a good idea thanks, I've not made one for a while and I have pastry in the freezer:D

    How about a omelette using the cheese and chorizo or bacon, or using feta to stuff the peppers with tomatoes and other veg :)

    I think it was Nigella who said adding a few dried wild mushrooms to a dish will make 'tame' mushrooms wild :rotfl:

    The day started well with my electric 'tripping' when I turned on the lounge light :( I changed a bulb when I got home as I couldn't face it first thing and it seems ok now.

    I have pulled out everything in my lounge and dining room when I got home and the only creatures I can find were a catnip mouse (which made me jump) and dust bunnies :cool: there seem to be a few less flies today mainly in the kitchen without so many in the dining room but that could be wishful thinking:o the sticky paper was about as useful as a chocolate teapot :cool: they walk over it :mad: the only things I haven't looked behind are the washing machine and dishwasher, i'm wary of pulling them out I don't want to disconnect the pipes. If there's still a problem at weekend my nephew will come up to pull them out for me. There is a air brick behind the dishwasher so will check outside. Still no 'dead' smell in house so I will fly spray down the side of both appliances before I go to work, I've a work event tomorrow evening and won't be back until after 11pm so coming home should be fun. A complaining cat and flies.

    Sometimes a man would come in handy :rotfl: unfortunately my BIL was my go to guy but I don't like to as him for a favour now they're not together.

    Lunch was prawn salad and dinner the last of the courgette pie, it warm up great in the airfryer, I felt I deserved the choc ice I found in the freezer :rotfl:

    Edit - quiche is a better idea than omelette

    Glad the flies are easing - hopefully it's just been one of those things and will sort itself out;)

    I know what you mean - back in home area there is a guy that sort of alternated to and fro a bit in status as to whether he was boyfriend/friend/a fellow Lets scheme member I was doing a Lets barter with/paid. Whichever status he was currently - he used to help out with odd DIY tasks and computer fixing. Sighs....

    My second favourite option when a couple of immediate neighbour houses get sold (as they are obviously going to be in the not-very-distant-future) is if a nice single man/handy with DIY/etc moves in. I'll soon be offering cups of coffee/surplus fruit/extra home-made bread/cat-sitting if applicable if he seems reasonable - and hoping for any odd DIY jobs done in exchange.

    Me - I'm well into the idea of bartering for what I want:rotfl:

    More surplus fruit about to be left with one of the friendlier neighbours on my way out today (as they sometimes leave their surplus fruit of other descriptions for me). Other surplus fruit to be left on another doorstep - as more "service to community". I've still got some surplus fruit to come...
