I made this pissaladiere with a less oily topping of leeks poached in vegetable stock and ricotta sprinkled with thyme leaves instead of the parmesan.

I made a lovely tea tonight: Cod and salmon in a parcel and oven baked served with a sauce of sauted veg (courgette, leeks, chopped fennel) in butter, lemon, splash of balsamic and garlic. Also had some TS broccoli, samphire and asparagus fried in lemon and butter and some celeriac puree and served it in a tower/pile. I wish I had taken a photo as even DS said it looked like it belonged in a Michelin restaurant! certainly looked prettier than my usual 'plonk it on a plate' approach.
Had a slice of blueberry and lemon almond sponge with cream for pudding.4 -
