A mini pizza, two chicken wings and mini sausage rolls for lunch,
Scampi from freezer and chips tonight. I have a massive bag of potatoes so really the chips should be HM and not the freezer alternative.

Tonight I’m making Korean chicken with rice and cucumber pickle. It’s chunks of chicken thigh meat coated in cornflour and pan fried, then finished off with a spicy sauce made from sriracha and various other bits and bobs, and sounds very tasty.

I had stupidly frozen a very large pack of chicken thighs without separating them first (rookie error!) and had to defrost the whole lot at once because I couldn’t prise them apart so I’ve turned the rest of them into a chicken tikka curry to go back in the freezer.

I’ve also made a sponge traybake topped with whipped cream, strawberries, blueberries and kiwi fruit slices for this week’s puds.
