Tonight I’m making Korean chicken with rice and cucumber pickle. It’s chunks of chicken thigh meat coated in cornflour and pan fried, then finished off with a spicy sauce made from sriracha and various other bits and bobs, and sounds very tasty.I had stupidly frozen a very large pack of chicken thighs without separating them first (rookie error!) and had to defrost the whole lot at once because I couldn’t prise them apart so I’ve turned the rest of them into a chicken tikka curry to go back in the freezer.I’ve also made a sponge traybake topped with whipped cream, strawberries, blueberries and kiwi fruit slices for this week’s puds.3
