Karmacat said:No problem, SSS - it really is appallingly easy Easy nut roast | The Vegan Society
Nice to see a super simple recipe using basic ingredients we have lying around. I just need to buy some mixed nuts and we are set! I think I might make it as a "side" to accompany a smaller than usual portion of roast meat (replacing the usual sage and onion stuffing). If it goes down well we could have it as the main event every now and then in future

I've never eaten enough nut roasts to have an opinion on them, actually
apart from thinking that they're too much work
but now, with an easy recipe and it becoming more important to me (with the pandemic) to shop less often, using nuts is a boon, and nut roasts are one more way of doing it. So it goes
I was out for hours this morning at our local walking spot - we did the walk in reverseand it's true that it looks completely different. We also saw 2 planes coming in to land at the local airport, woo hoo - though I really don't see myself travelling abroad this year.
So, I'm completely shattered nowhealthy amount of sun on my face, I had a good lunch ready for when I got back, just going to relax with a book, and watch the sun on the leaves, counting myself very lucky that nothing blew over or blew down. Life is good that way

I finally have my next supermarket delivery arriving this afternoon - I booked it ages ago, and kept delaying it, because I had lots of frozen veg, I won't do that again, I actually made more work for myself. I still have veg, but I've been doing without cheese for *weeks* now, it was hard to get feta from sheep and goats milk for a while (another reason for the nut roast focus!) and I really **want** some. So this is my to-do list:
- clear porch ready for shopping delivery
- go to postbox, 2 items to be sent via snail mail, weird.
- emails! They'd be useful to do, I don't want to do too much physical stuff because there's the next item:
- clean new shopping! If I can get the frozen and chilled stuff all cleaned (I've ordered a **lot** of cheese) I'll be happy.

I'll be with you in spirit this afternoon KC - we also have a grocery order arriving and will be doing the cleaning & tidying. Good thing too, as the kitchen floor needs a wash and it's the last thing I do after putting everything away!4 YEARS 10 MONTHS DEBT FREE!!! Sounds good, RT - my order's due between 3.30 and 4.30, so I'm still hanging for the cleaning, but I've tidied relentlessly
I'm very pleased with what I've done. Merging containers, recycling a metal box, that sort of thing. I found a knife sharpener I ordered during the first lockdown, still in it's protective plastic casing
even worse, I found spices and volcanic salt I bought in the Canaries, *before* the first lockdown. I'm slightly appalled at myself, but I'm mentioning it on here to stop me letting it get that bad again. And I let it get like that even though I was here the whole time because, y'know, lockdown and global pandemic.
What it *really* shows is how much I had to let go while I was ill, that' the reality, it's why I go on about "catching up". I can't tell you how pleased I am to do it!

I don't think that I have ever 'tidied relentlessly'! Well done you!

Thanks! I had a rest after that, and to be honest I still haven't cleaned all the chilled stuff, but it will last a night by the front door, it's quite chilly there
I've eaten rather a lot of cheese in celebration of having it in the house againyum.

Well done KC! Isn't it amazing what gets found during a tidy?
I'm terrible for keeping shipping packaging 'just in case' and when tidying them to the recycling bin have on occasion found unopened items! In the past this has meant having more than just one spare but this has greatly improved over the last year of cultivating a more mindful approach to our storecupboard.4 YEARS 10 MONTHS DEBT FREE!!! Hi RT - I love that phrase, a mindful approach to the storecupboard. Thats actually what I've been doing with chopping up the nuts to a manageable size I suppose. Nice one.
Today is just a continuance, really - shopping away, bathroom and washing machine ready to use when I come back from the vaccination centre. I *have* been pootling online looking at 3 seater sofas, the ones with only two cushions - I'd bypassed them, but thats exactly what's right for me. Will check some more, and take measurements. Also been checking a non-Amazon stock of seedlings already growing - yay, SarahRaven.com, very nice, reputable, P&P is very good.
