Ok I've got a dilemma, the chicken was lovely but there is as much as we ate left, what one earth shall I do with it?

I was thinking well it's not on my meal plan to use that up but I may aswell as it's sat there, would be a waste to fling it. DP will only usually have chicken breasts in curry which I have planned for later in the week. My meeting is cancelled tomorrow so time no longer an issue. Wish I knew how my grandad used to make his sauce that went in his chicken and ham pies as I have bacon pieces and could have done that :( Any ideas anyone?
One day I might be more organised...........

Lil-me, isn't it just usually a white sauce in a chicken and ham pie....or, what about a tin of condensed soup?

lil_me marinate some of the scrappy bits in some spicy stuff (whatever you have in saucy wise or dry mix even)Tomorrow make up a pizza top with usual plus your chicken bits and pop in freezer without cooking for a nice standby tea when needed :D *why have I gone mad on pizza all of a sudden  *
Checking through some older cookery books for a sauce recipe...have evrything from about 1890's onwards any idea what sort of era lol???

Probably a white sauce, don't have any condensed soup in unfortunately and trying to spend as little as possible, any recipe for white sauce? Might give that a try as I am sure the bacon will take the place of the ham. There is so much chicken I can probably do both that and the pizzas, might freeze some for now first however. Got some bags of pastry mix :o something else I have found

My grandad was great at pies, something I never got the recipes for but he used to make them for local butchers etc when my gran took poorly as he had to stop working (was in the navy then worked on buses then as manager at the bus depot, nothing to do with cooking) they would pay him in meats etc, anything he wanted, never had much money but always had lots of food in.

    2 x onions
    1-2 cloves garlic
    3 tomatoes
2 oz butter or 2 tblespns oil
1/2 tspn chopped fresh oregano (or pinch of dried)

    sauce
    1 1/2 oz butter
    1 1/2 oz flour
    1/4 pint chicken stock
    1/2 pint milk
    2-3 oz parmesan
    2 tblspns dble cream

cook cannelloni til soft and drain
cook chicken chop into pieces (already done if using leftovers)
    chop onions,garlic and tomatoes
heat butter/oil and fry veg til soft add chicken, oregano and enough stock to moisten..
Fill cannelloni tubes with this mixture.
Make sauce, heat butter/marg, stir in flour, then gradually add the stock and milk.Bring to boil and cook til thickened, season well..

just wanted to say ive been following this thread and really enjoyed it! Its inspired me to get back into my OS ways a bit more - starting baking again this past week or two - havent properly done that for months! Its quite theraputic!

Also reduced my grocery spending by actually getting round to using up the things in my freezer (been meaning to do it since aug!!! :o) I did a f/f and storecupboard inventory and managed to come up with 28 evening meals!! So that list is now on the f/f and i wont be buying anything for evening meals till i have finished off that list!! Consequently i have only spent £33.10 this month on shopping so far.. and thats included some treats!

I have to admit i am getting a bit panicy about my storecupboard stores running down, I spent 2 hours last night re-writing my shopping list again and again taking out all the non urgent things... i had this huge urge to replace all the storecupboard things id used up... even though they arent gonna be needed on my meal plan for the next 21 days at least!!! But i resisted and ended up spending just over £4 today for most of my weeks shopping!:j

(Secretly cant wait till after ive finished though so i can do a HUGE shop and replace it all again! :rotfl: )

Theres only me at the mo, but im hoping getting back in my ways will help tremendously when bump arrives!! :D Id say it would help if OH decides to move in with me too but he just eats junk food and is a fussy sod when it comes to eating and moneysaving in general - is it wrong for me to hope he wants to stay in his own house even after bump arrives?! lol

Oh and btw... D&DD them hats are FAB!!!
