    I read that the starch in potato, rice and pasta water acts with the starchy proteins in the wheat (gluten and gliadin) to make them stronger and more elastic, giving a better rise and a more consistent crumb.

    It means you can get away with using value flour rather than bread flour at a push, if you need to.

    Yep, that's the theory, and it seems to work. Certainly for bread. As for soups and stocks it seems to me to add just a little in the way of thickness and depth of flavour. I do save veg water for these too, but top up to required levels with potato/pasta/rice water when needed.

    Another tip:- Haven't got a steamer?

    I use a pan and a sieve that "just" fits inside it. Put yer taters in the pan, cover them just enough with water. Put yer veggies in the sieve, sit it in the pan above the water and then put the lid on. Depending on how well they fit together you might lose a little more water (as steam) round the edges - but it works a treat.

    Plus you now have water that you can save that's tater and veggies combined ;-)

    Yep. I do that as well Squeaky, it saves money and also on the washing up. Just got to get my DH to do the same thing lol.

    I've learned that I'm not the only one who is often referred to in the family (jokingly I might add!)as being 'tight-fisted' :o.

    - I'm not the only person who has an OH who can sabotage a whole week's worth of careful spending plans with a trip to the shops by himself :mad:.

    - I'm not the only person who is pernickity about using-up leftovers :j.

    - I'm not the only person who hangs onto Christmassy bits&pieces - knowing they'll come in handy NEXT year :T.

    - I'm not the only person who thinks it's positively a crime to open a tube of toothpaste until AFTER you've squeezed every last bit and then opened it to scrape the inside of the old tube :o.
