    To reverse sear a joint of meat, you salt it liberally and let it sit, uncovered in the fridge overnight. This helps the surface to dry out. You then bring it very slowly up to the desired temperature for the required level of "doneness" (so 55 degrees celsius in my case for a nice medium rare). I have a temperature probe with a metal lead, so I can leave this in the oven and keep an eye on it. Once it reaches temperature, you whack it in a blisteringly hot pan for a couple of minutes on every face and then let it rest for 1/2 an hour before serving.

    It locks the moisture in, makes it nigh on impossible to !!!! up expensive cuts and makes for some of the tastiest meat you've had in your life :beer:

    "Reverse sear" because this is the opposite of the received wisdom for how you are meant to cook meat (spoiler, the traditional way loses more moisture and flavour).

    I have finished the first draft of my job application, have successfully referred another 2 forumites for RateSetter and now appear to have an hour or so off before DD gets back from a play date. Shhh - don't tell anyone ;)

    Nice little afternoon - trip to the pet shop, petting zoo for DD at the park and then a couple of hours nattering to parents. Gave brother's girlfriend a lift up the road - she is down to earth and chatty. Such a change for our family, I cannot get over just how awkward some of the wives who have married into our family are (make me look like a genius socialite)! :rotfl:

    In unrelated news, I am raging, Waitrose no longer let you use money off coupons in Scotland where your order contains booze. They claim it's to avoid breaching minimum pricing laws, but that sounds like horse crap to me. I don't know if you've ever been to Waitrose, but they don't sell much that's cheap :p

    I think this was for a online order in which case it would not work.

    I only get sent vouchers for very high order amounts (think £90-100). I couldn't afford to spend £100 in Waitrose excluding booze :eek:

    In any case, it's a pain in the posterior to have no notice of this until you get to the checkout and then discover it in 2mm? high print on the back of the voucher. It's a fairly significant change, you'd expect perhaps a sentence or two in the voucher mailing to call it out.

    Done now, but I'll no longer be able to shop there unless I empty the freezer beforehand.

    Today is pay day, but in the land of sensible advance planning, that means I now have 1/2 of the money for July's bills, so not very exciting :o

    I am looking forward to the start of July, which is when I get my experience of the mythical "13th pay", a peculiarity of local government? This will allow me to pay £1,600 or so off our CCs.

    Oh well, back to lurking :)
