  • When I want to freeze a small pizza I slightly undercook it first. I then defrost it and put it directly onto the oven shelf as the base is already firm.

    If it is a very large one covering a whole tray I freeze it uncooked on the baking sheet. When I need it, I take it out a couple of hours early and let it defrost and come to room temperature. It then bakes absolutely fine as if fresh.
  • What I do is freeze the dough in balls (1 pizza per ball) then take it out the morning I need it, leave it in the fridge all day to defrost and prove a bit, then roll it out and part bake it before I top it. If you p-rick the base really well before you part-bake it then it shouldn't go too puffy (if it does you can carefully press it with a tea towel (mind the steam!) and it won't puff up again when you rebake it.
  • I tried making my own pizza last week but the base tasted doughy. While in the cheapy shop I found a pizza pan. Its basically a shallow round metal tin and another the same but with holes in the base. It didn't have any instructions and I'm not sure how I'm supposed to use it!! Any ideas, or other ways to stop doughy tasting pizza would be fab. As always I apologise for being a bit thick, thanks guys and gals

    not quite sure what you mean by it having 2 pans....my pizza tray is just a round metal tray with lots of holes underneath, so that the base cooks crispy. i just put the pizza on it and put it in the oven. so maybe you've got 2 pizza tins? sorry if i've not been much help!

  • I want to make some HM pizza in the shape of Thomas the Tank engine as I have some new Thomas cutters.

    I know it might seem a bt ridiculous but my DS who is 3 would live on plain pasta if I let him.

    I thought we would try a bit of pizza and if it was in the shape of Thomas then it might just tempt him:D :D

    So I presume that I would have to bake the dough with no topping on and then use the cutters to cut out the shapes. I would then recook the pizza with my toppings on...

    Do you think that would work?

    Get him to help you cut out the pizza dough and decorate it with whatever he likes the look of. Maybe bright colours like red and yellow peppers, sweetcorn etc may appeal to him.

    Good Luck - 3 yr old appetites can be a right pain in the asre!
