    This morning I made a batch of lentil & bacon soup that will do us for a couple of lunchtimes.

    The lentil & bacon soup didn't make it as far as the freezer! :D

    Tonight's dinner will use up a half jar of creamy white wine sauce (diluted down a bit) with chopped peppers, mushrooms and chorizo from the freezer, plus a tin of tuna and half a small tin of sweetcorn, to have with green & white tagliatelle and sprinkled with grated cheese.

    A small spend today in the C!op, £2.18, for two tubs of beef spread. Long dated, so one for this week and one for next. Same product in Sainsbobs is £2.40.

    Am currently doing an online order for delivery tomorrow to take advantage of a £10 MOC on a £50 spend. This is for things I have already run out of - or am about to - but I should still have around £20 left in the budget for next week. And it will give me a good start for December.

    Next week's meals will once again come out of the freezer/stores and I'm aiming to have one empty drawer by the beginning of December to use for the C'mas foods I prep in advance - stuffing, pigs in blankets, roasties, mince pies etc.

    Hi all

    Been absent for a few days as been really quite unwell with a viral throat infection that has gone onto my chest. Finally feeling better and going back to work tomorrow.

    Budget stands OVER at £187.47 / £165

    However I"m happy with that, I'm still a decent amount under average spends and I'm unlikely to need anything else. My budget runs until Thursday - December starts Friday for me.

    I think I'll be going for £185 in December.

    Due to being ill, I lost my appetite and also just didn't have it in me to make things I'd planned, however I've made a couple of things today and so my freezer is stocked up again and there is not food going to waste in the fridge that I'd planned and not used. Which is the main thing!

  • Hope everyone's well. Been a bit up to my eyes. Had spends of £7.25 and my first spends on 'booze' since the end of August!!!!! Can't wait to have a few days free - my place looks like it's been burgled. Gonna be like this 'till the middle of December. I don't really have to buy much, if anything, I have loads in and can mix n match. Have a lovely day everyone. Have updated sig.
  • Right, I dropped off for a couple of weeks but now back!

    I have decided, following the 15kg-of-rice fiasco, to take that from a 'Bulk Buy' budget, and spread the cost over 12 months. That leaves me on £136.30/£150 with just over a week to go. I know I can do it as OH won't need to be catered for next week and I am more than happy to live off rice, eggs, tuna and whatever veg I can get for the remaining budget.

    Your menu sounds delicious, how do you make the onion rings?

    1/2 tbsp. paprika
    1/2 tsp garlic salt
    1/2 tbsp. cornflour
    1 large onion sliced into rings
    Low cal cooking spray
    Egg white
    50g breadcrumbs

    Line a baking tray with non stick paper.

    Mix the spices together. Spray the onion rings with low cal spray and toss into the spice mix to coat. Dip in the egg white and then coat in the breadcrumbs.

    Place the rings on the baking tray and bake for 20-25 mins at 200/180/gas 6 until golden.

    I am going to have these tonight with a SW veggie burger (no bun), SW wedges, a little cheese and veg. DH will have a 2 x SW beef burger in a bun, cheese and probably no veg.

    We haven't had a good month budget wise this month what with half term, DS going back on school dinners and too many shops in Tesco with DH and DS in tow.

    My meal planning has been much better as I have started to batch cook on a Sunday and I have been making DH lunches more substantial so he has not been tempted to buy extras from the sandwich van or vending machine.

    My total stands at £491.87/£500 and I will need £5 for beer for DH and some milk, fruit and bread for next week. I bought enough last week to last until the end of the month for meals. I will be shopping on my own on Friday so there is a chance I might come in only a couple of pound over which will be a result :D

    Slightly under on annual budget as well but will have to be frugal whilst doing the Christmas food shop to stay inside it by the end of the year. It really is much tougher to shop to a budget than it used to be.

    Just waiting for my bacon and lentil soup to finish cooking, put leek and swede in it so hopefully it'll turn out ok.
    Oh my, soup was delicious, amazingly filling and I've got loads left!

    Only a couple of small spends this week £2.60 for milk and bread from the corner shop and £4.79 for some strawberries and crumpets and a carrier bag.
    The strawberries were meant to be for dessert last night as I was going to a friends house for tea, but got half way there and realised I'd forgotten them, wasn't driving back to get them (another friend was bringing ice cream), so I'll enjoy them after my soup.

    Yorks Lass printed off the soup recipe thanks.
    Filled tank , had to pop to Swansea, so went to the huge Morrisons, 3p a litre cheaper than my local, so with 10p a litre off too, saved nearly £6 total cost £49.29, called at Tesco spent £25, hopefully fully stocked for November over budget £8.38 but lots in stock and full tank.
    Do I need it or just want it.
