Could you make your own soups? Put lots of veg in it that way? I always puree my soups as I don't like chunky soups and it is a way of getting veg in. x
I could try, I've never made soup before. I don't have a food processor but I could just cook it down I guess. I don't mind chunky soup.

Your feta recipe sounds good but I think I'd have to do the chopping at weekends and freeze it. I can't seem to face chopping things on weekdays.
Works well from frozen, and you can buy pre-chopped frozen peppers cheaply (c£1/500g) rather than chop for yourself. Handful of those cooked from frozen and a handful of unchopped cherry toms per person with a drizzle of veg oil would work brilliantly. Smallish whole mushrooms are nice too, You can buy frozen pre chopped red onion too. 20 minutes or so at 180 for the frozen peppers and fresh cherry toms with or without the not quite feta cubes(75p Creamfields greek style/200g in MrT). Stir through your couscous (made with 5p veg stock cube) and add a bit of optional oven roasted value fish (the fishmongers white fish fillets at 520g/£2.18) to make the meat eaters happy and you have an excellent meal.

Thank you Redo. That sounds like something I could try. It would be worth spending a bit of money on some pre-chopped veg if it makes us all a bit healthier and me less tired. I wish I was better at cooking.

I keep a bag of ready washed baby spinach. I eat it as salad leaves raw and whatever I am cooking I throw in a handful. I think spinach goes well with eggs and that is such an easy, healthy win if you want to up the greensIf you have built castles in the air, your work should not be lost; that is where they should be.
