  • Hey there Tea&Kittens you're very kind thank you.

Well nice day here - made some of brownies and two carrot cakes. Also made a pot of soup of lentil ish soup using 'moong dahl' - split mung beans very yellow and quite fine. Made a cracking (quick) pot of lentil soup and so beautiful. I'd bought them as they were cheap and I thought looked interesting. I think I'm liking these more than the normal lentils I buy.

Picked 2kg rasps again - will make some sugar free jellies for lunch and freeze some too.

Huge veg box from work. Lots of bits to cook in that and preserve. Was a thank you for the weekend event. Nice.

Must start to make more spring roll sausage rolls and snacks for the week ahead.

    XOXOX

Offered to look after a chums wee dug as they're on holiday in Oct - not entirely aulteristic - my mum usually looks after mine at xmas and as that will be slap bang in middle of chemo - I'm not sure that's a very fair thing to do. I'll play it by ear but at least this way I might have a back up plan.

Barely want to think about it but I guess I'm going to have to start to. Right now she's wanting everything business as usual - so I respect that. But, I'm mindful of stretching her too far if she's not well and has enough to deal with.

  • Money update

    £0 CC1
    £2160 CC2
    £900 OD1
    1000 OD2
    Total
    £ 4060
Which means we've paid off £1695.40 since we started this little venture.

I must admit I'm feeling quite skint this week - there were extra spends for the larder/stores but I think its been worth it. Feel ike I've paid a huge chunk off CC this month - but I guess we're still alive and the cupboards a very far from empty. Didn't put extra to oil this month as it went to the shelves. Can't have it all will top up the tank after paid Also well rattled the petrol budget with extra trips for useful builder brothers etc but all worth it.

  • Soup is boxed and in freezer 6 portions.

Made some rasp jelly with half the rasps and will portion later.

Carrot cakes wrapped and in pantry.

Made up some spring roll 'sausage rolls' with veg and tatties - think I put 10 into bake I'll double check when they come out the oven.

Boxed cherry toms for lunch veg snacks and chopped some courgettes too. Some more rasps in a box or two for treat snacks too.

Not a bad day cooking from not very much outwith the stores. I do love a full pantry.

Cancelled seeing DD tomorrow after work, its a rush, I'm stressed about my mum and I'm v short of petrol money if I do go so its work or gadding about. She's fine with it I only saw her a week ago.

I realise I'm stressing about money, but really we're fine. I'm just not using the cards as a 'it doesn't matter just do it spend' and being more focussed. That's not a bad thing.

And, I've paid a shed load off the debts this month so I'm reminding myself that whilst its painful, its moving forward.

Off to check those breakfast snacks for work and sort my own breakfast out otherwise I'll be like a headless chook the morn.

Breakfast is definitely a priority! :kisses3:

Sorry you're stressed lass. You're right, you're pulling in your belt a bit for a good cause so it'll all pay off in the end :)

Just made a batch of your brownies :j Improvised by chucking in cinnamon, almond essence and half a tin of peaches :D (and then accidentally left them in the oven a bit long so they're a bit more like chocolate fairy cakes... Oh well!)
  • Oh cheery they sound lovely and I'm sure they'll be moisty-toisty in a jiffy with those peaches in - yum.

Dreich doesn't cover it here today. Its bleurgh.

HM lunches and brekkies sorted - watching the petrol so I'll not be gadding too much this week.

Forgot to hang up the washing this morning - oh well.

Hope everyone has a gun un.

    xoxoxo
