Yesterday I made curry base from the recipe on mortgage free in three here
I diced some chicken, and left it so sit in some natural yogurt, lemon juice and curry powder for a few hours which helps it to tenderise. Made a basic chicken curry (onions, curry powder, base and small tin of coconut milk) with part of the base sauce and then a potato and cauliflower (small florets, small cubes - steam, add fried onions and base) with another part. The rest of the base has gone into the freezer for another day.
Tidied the freezer today so a better of idea of what is lurking. Made a bacon and Parmesan quiche for/with DS1. Used a batch of stewing steak to make a nice smoky chunky beef goulash soup, adapting this hairy bikers recipe, reduced the beef to 400g, and added half a teaspoon of chipotle chilli flakes.
I also found a jar of peanut butter lurking in the cupboard so I made (gluten free) cookies here although I reduced the sugar to 100g and leave out the salt - plenty of both in the PB to start with. Agree totally on the butter though - I mentioned on my diary recently how much it had increased - I think we established that either Aldi or Lidl was about the cheapest currently at somewhere about £1.23 a pack.

It might have been me (or the other me) that mentioned the Lidl butter I think, but it has now gone to £1.40 in ours.
I also have the takeaway secret, and have made that base before, also the curry queen one on MSE. More soup made - OH is taking it work in a flask for his lunch hence the high volume. Squash, coconut and chilli, as per post 221 but using a whole butternut squash, a large tin of coconut milk and a big handful of rice to make a nice thick soup once it was blended.
I have got a pumpkin to use up but think I will go with the sausage, pumpkin, lentil thing of former years rather than make yet more soup. I also have some chicken scraps and a carcass to use so that may end up as chicken and sweetcorn soup. At this rate the freezer will be full of blocks of soup, and I will run out of tubs.
A year today since I plunged into the challenging world of contracts and self employment. On balance a successful year, and I am ending it on a nice contract, with a couple of potentials in the wings ready for when this one ends.
