If you fancy something different with rhubarb, this might be interesting: https://www.feastingathome.com/roasted-salmon-with-rhubarb/. Not tried it yet but sounds nice!
Oooh - that does sound interesting MV. Good to have a savoury option.

I made rhubarb chutney for the first time recently, very easy and I really like it. Good with cheese and had it on a smoked mackerel fillet a couple of days ago and that was yummy3

A Grand Day Out
We went out for Sunday lunch yesterday with Uncle F and had a lovely meal. Dropped Uncle F back at the house and picked up FDawg for a drive out into the welsh mountains. Then finished off at our local brewery for a drink and an ice-cream. It was lovely to have a break from the homestead for a while. We had a light supper of a bagel with hot smoked chilli salmon, cream cheese and capers and finished off the night with a video call with the Younger Fortunates and a few glasses of wine. It was a grand day 😁
Today I've walked for an hour and spent an hour in the garden. I've started the weeding of the biggest flower bed but I noticed little weeds emerging in the veg patch again today so tomorrow I shall have to get back in there with the hoe.
I sorted out the house insurance and called the plumber. Out heating is ignoring the thermostat and randomly turning itself on and off. It may be the diverter valve which costs £80 apparently so, with the call out charge, we'll be facing another hefty bill 🙄 The grocery shop came in a tad under budget so that's something.
We had Roast Cod with Petit Pois, Bacon & Spring Cabbage with new potatoes for supper. I made enough for tomorrow's supper as well as I have a WI Committee Meeting to attend.- the first in many months. My social calendar seems to be hotting up as I have a few other events in the diary now. Mr F and Uncle F have had their second vaccines and I'll be having mine on Wednesday. All the Younger Fortunates have had their first so I'm hoping it will be safer for us all to meet up soon.
We had some very good news today. Uncle F has had an offer accepted on a property back in his home Shire 😁 The sale on the property he shared with his ex is due to complete at the end of this month so he may be leaving us quite soon. It's really important for him to have a way forward and an end goal at the moment so we are all really pleased.
Happy Monday folks

Ooh, all fingers crossed things go through smoothly for Uncle F! Will you let the annex out again once he's gone? Or have you not thought that far yet?4

Thanks guys. We've got our fingers firmly crossed too. I think we'll just let the annex to friends and family going forward. Not sure I can face having strangers here again after it being just the two of us for so long.
