    I made a couple of the Victorian Nursery cakes - I love that recipe, it always turns out nice. And today if I feel energetic I'll do a Lemon Drizzle.

    I'll dig it out and post it here. I found it on a blog somewhere and just liked the name, and now it's the only cake I ever make. You sprinkle demerara sugar on top before putting in the oven and it makes a lovely crunchy sweet topping.

    hello all - hope everyone had a good Christmas and new year, that the RV is improving and that Monna is happily settled with no boxes around her...

    I am still typing.. though am on holiday for a week tomorrow and I am not taking it with me :T !! Although I am flat out now (despite that I am here :rotfl:) to finish the third of 3 chapters to send to London

    VICTORIAN NURSERY CAKE. THEEE best cake recipe out there!

    150g unsalted butter
    150g plain flour
    120g castor sugar
    1 teaspoon baking powder
    1 teaspoon mixed spice
    2 eggs
    100g sultanas
    1 tablespoon soft brown sugar
    ****************
    Mix all, put into a tin, and MOST IMPORTANT sprinkle the soft brown sugar on top just before you put in oven. Gives a lovely sweet crunchy topping ;)
    ****************
    Gas oven Mk 5, bake around 25 mins.
