    That has just reminded me that I like this as well for a lunch, but I melt grated cheese on top of the mushrooms and then put the lea & Perrins on.

    I also like toast with ham, then melted cheese and topped off with a fried or poached egg on.

    I think I will start having some things like this for lunch instead of sandwiches now the colder weather is here.

    Good morning everyone,
    It's pretty grey and chilly here this morning though the forecast is for it to stay dry so might get some garden tidying done later.
    I've a notion for spaghetti and meatballs tonight, I've a small pack of mini-burgers in the freezer which will easily turn into meatballs. These are not something I would buy but came as a freebie in a meat order. There will be enough for 2 portions but I don't mind freezing one. I can use up some of the passatta I made yesterday so there will be less of that needing freezer space:). Lunch I think will be "something" on toast probably egg or cheese:)

    Morning all, miserable looking here at the mo.

    Had usual brekkie of toast and cheese spread.
    Lunch will probably be a thin with salad ,and either cheese or mexican chicken if I can get it out freezer in time to defrost.
    I think I am going to make some pizzas g free ,for the freezer, so will likely have one for tea.
    They will be topped with chilli ,garlic ,mushrooms,onion,peppers, and mexican chicken and cheese.
    Dgson is coming after school so I'll need to check I have a pizza in for him too.
    Focus on contribution instead of the impressiveness of consumption to see the true beauty in people.

    I popped a crustless quiche in the oven as I'd got stuff that'd fit in that and I had bought a pint of milk BBE tomorrow I'd not even opened yet!

    EDIT: Ate that, couldn't wait .... cut it in half .... then went back for the 2nd half.
  • I feel much worse today, annoying. I don't whether to cancel my GP tomorrow but I've run out of my tablets. I wonder if they would do me a repeat prescription.

    I had a peanut butter sandwich for breakfast today and lots of hot tea.

    I'm having some shopping delivered later and I'm looking forward to having some lemon and ginger tea.

    I probably will have a ready meal for lunch along with some steamed veggies for vitamins.

    Meals today look likely to be a bit more "eating up what I no longer eat" stuff from the freezer.

    So - hauled out a readymade smoothie of fruit and veg as part of lunch. Not thought beyond that - so probably cheating with toast with some use-up coconut/almond butter.

    Dinner looks likely to be sauce of use-up fake "meat"/canned tomatoes from freezer/fresh tomatoes from garden/bit of pesto (no longer going to make pesto with oil in). Served with millet (my latest experiment in slowcooker - cooked marginally too long in the event). Think 1 hour is probably going to be pretty much the sweet spot for how long to cook a bit of grain for 1-2 portions in there on high.

    Might get round to another experiment later. Lots of hunting through my cookbooks later and they don't seem to have any tortilla recipes in (huh????? - considering that a lot of them have only been bought in last few years??). So - lots of googling later for recipes for oil-free tortilla in quantities for 1 or 2 and I found one on YouTube I must try out. If anyone else is interested - it's for 2 tortillas:

    half cup flour
    half teaspoon baking powder
    1/8 teaspoon salt
    3 tablespoons warm water (am guessing I could substitute that with mylk - aka plant milk)

    Knead till a ball forms. Divide in 2 balls. Use rolling pin to roll the balls out. Do for 1-2 minutes per side in saute pan (they use a couple of sprays of spray oil to "moisten" pan - will be trying to see if I can do it without now that I've bought suitable pans for oil-free cooking).

    Sounded easy/quick enough to me. So might try that one today or tomorrow and hope it works out. I do need a suitable recipe for wraps - as they're used in so many modern recipes/would be so useful and there's literally nowt healthy enough in T*sco (all those chemicals in them) and nothing yet in local health food store (which is a bit old-fashioned).
  • Second thought for the day - I've got lined-up to try out what looks likely to be a regular evening social event. Part of this includes everyone taking a snack to share. My first thought jumped straight to making energy balls - but that was quickly supplanted by thinking "Bet lots of other people take sweet stuff. Better take something savoury (and, hopefully, that will encourage others to make it something savoury they take too)".

    So - if these tortillas work out - then I could start with taking tortillas and some home-made hummus. If they don't work out and for any times thereafter - what sort of savoury things (of the healthy/modern/vegetarian or vegan variety) would people fancy at something like that?

    How about something like filo pastry tartlets filled with vegetables. you could put an Asian twist on them by using a creamy coconut sauce. I think filo pastry is a fairly modern thing, and the Asian type foods are as well.

    Vegetable spring rolls.

    Other than that I haven't got any more ideas.

    Afternoon everyone

    I had some porridge this morning with the berries from the freezer. I think that there will soon be some space appearing in the freezers as I use the berries in porridge now the weather has turned. I tend to use more of them in porridge than I do when I'm having them with Greek yoghurt for breakfast.

    I had ham on toast with melted cheese over for lunch. Having had my memory jogged for that sort of thing yesterday I had a craving for that. I didn't have the egg on the top though.

    No more freezer UFOs so back to choosing what I fancy for dinner. After having mainly stews/casserole type things for the past few days I want a change, so have got some haddock defrosting to go with some steamed baby potatoes and veg with a parsley sauce tonight. I've also got spotted d*ck and custard for pudding.

    There is enough jam rolly polly and spotted d*ck to freeze for another day, so I'm really pleased about that :).

    This is one of the banes of CFO... when you stop eating things, because you're tired of it, or find a new favourite, or the weather/season changes .... you end up with a backlog of the leftovers, whether that's ingredients, or new packs bought in and still unopened, or frozen "leftovers" of the last one.

    I do hate that aspect ... some stuff will get eaten again, when "the season for fancying it again" returns, but that means some things sit cluttering up the cupboard for another year.
