Vegetables in my breakfast

  • Can I just point out that mushrooms are NOT a vegetable. Fungi is a separate biological classification. As a vegetarian who detests mushrooms I get sick of people assuming I eat them all the time! Evil squelchy filth.

I love avocado on toast for breakfast; I think it's the contrast between the cool slices and hot buttered toast.
    They are an EYESORES!!!!

In case you were wondering if/how zucchini/courgette becomes part of breakfast, here's a possibly helpful article - whether being 'on trend' helps, I don't know, but the taste is addictive.

That's from 2015. They're probably now retro... or vintage...

I am interested in the idea of carrot in porridge (maybe with apple/sultana) but I think I will need to try it out of OH's sight the first time. He gives me enough grief about the amount of veg that appears on his plate already! Not that he would touch porridge anyway - despite loving rice pudding

I was aware of this but don't they count as veg as part of your 5 (or whatever number it is now) a day? - Happy to be corrected if that's not correct. :)

I've got a Vegetarian daughter, who doesn't like mushrooms. Hugely frustrating as so many veggie recipes plus meals out that seem to be based around them. Mind you I think DD's ultimate aim is to be a vegetarian that doesn't like veg.

Japanese style breakfasts of brown rice, spinach, carrots, spring onions & a poached egg in miso broth.

White rice is eaten by Asians, and is better for you.

Adding a carrot to porridge is essentially adding more carbs to carbs.

The absolute healthiest thing to add to porridge is berries.
  • Way back in WW2 carrots were used to add sweetness because of the sugar ration being so small each week. They were sold like toffee apples on sticks for children and there was also a grated carrot based 'almost muesli' recipe that was the Swiss Breakfast, not such a strange thing to add to porridge really!

I add berries to all my breakfasts - I was just looking for other forms of bulk
