Vegetables in my breakfast

Options
As part of my effort to eat ten portions of fruit and veg a day, I want to include at least two in my breakfast, but I'm having trouble thinking of what to eat, beyond tomatoes, baked beans and vegetable omelettes. I'd prefer not to start the day by frying foods - too smelly! I'd rather have veg than fruit, because I get plenty of fruit later in the day as easy snacks.

I'm sure there must be lots of ideas, If I can just get beyond the expectation of eating cereals or protein dishes, Any thoughts?

    Mushrooms (don't have to be fried - in a bowl with a drop of water in microwave cooks them )

    Spinach is quick to cook and full of veggie goodness - on toast and topped with poached egg. 'Smashed avocado' is big in Australia - again, on toast, topped with poached egg, and with the benefit of not needing to be cooked.
    No longer a spouse, or trailing, but MSE won't allow me to change my username...

    One of my summertime favourites - boiled eggs with asparagus to dip; really lovely.

    A BLT is also a good one for breakfast; although at the moment I'm substitute fresh baby spinach for the lettuce as I've got a big bag to get through this week!

    Breakfast omelette/frittata, call it what you like - an assortment of veggies fried or baked into an omelette style ... then left to set/get cold in the fridge and serve in slices/wedges.... on a bed of grated carrot.

    Quiche/frittata. I make a crustless quiche with avocado, mozzerela and bacon - I freeze for lunches but it could easily be a breakfast too. You can add whatever veg you fancied too, bell peppers, spinach, mushrooms, asparagus, sweet potato, etc.

    Avocado with bacon and egg. I've had it where you cook the egg inside the avocado and put crispy bacon bits to serve but it's a faff and much easier to just serve the three alongside each other..

    Really enjoyed a sweet potato hash as an alternative to a bacon sarnie for a hot breakfast too. there's lots of recipes with different combinations (some with avocado, some with kale, some with bell peppers, some courgette...or a mix of the above).     finely grated carrot in porridge - sounds peculiar but tastes lovely
  • Why not look at what the Greeks and Turks eat for breakfast ? Slice tomatoes, cues, olives, bread and cheese

    Or make a veg filled omelette / frittata and portion off to warm in the microwave

    Wee veg/ egg muffins done in a cup in the microwave

    Or a bag of frozen berries , take a cup out the night before. Add to pancakes or porridge
