    Have you ever tried carrot halwa/halva (not the grain-based ones)? It's a Pakistani/Indian dessert - super sweet and sticky (too sweet for me and I have a VERY sweet tooth). It reminds me of carrot cake as it's gently spiced. It is basically grated carrot cooked in milk/condensed milk with sugar and spices. For breakfast, I think it would be nice if you cut out most of the sugar and used non-condensed milk. You could serve it alone or with yoghurt perhaps. I think you can make it with other veg, maybe pumpkin or beetroot.

    The porridge with carrot idea made me think of it but with this you would probably eat more veg.

    Chop some yellow, red, or green pepper.
    Microwave for 30 or 40 secs.
    Place on metal tray,
    sprinkle with cheese and toast under grill. Delish and surprisingly filling.
    As a variation add toms, cougettes, seeds, leftovers as desired.

    Indian vegetable toast seems popular by the number of recipes

    Using a sandwich toaster might open up opportunities for using leftover cooked veg from the fridge, without using lots of pans etc in the morning

    Might be worth checking your library for David Bez's book "Breakfast Love". It is full of ideas for breakfast salads. Most of them are fruit based but there is a section on savoury breakfast salads.

    If you want to have a quick fix of fruit or veg for the whole family, then invest in one of the nutri bullet type jobs. We got a JML one from Asda in the sales and as a family we are easily getting 7 a day.

    Every family member has different tastes but are usually happy with anything as it is so easy to make.

    Fiddle around to find what works for you. It's great for using up fruit or veg which is starting to get a bit wrinkly.

    My favourite this week has been a handful of kale, handful of spinach, a few grapes, a chunk of cucumber, a couple of dates, few frozen strawberries (Aldi is cheapest for frozen fruits atm) and topped up with some fruit juice.
    It looks like 'Shrek juice' but it's so tasty if you don't mind the look.

    Takes literally a couple of minutes to make and you are set up for the day. I'd never sit and eat all that veg in the morning.

    I added grated courgette and carrot to my porridge this morning (along with dried figs and cranberries). i've been meaning to for ages, but just not got round to it before, and I enjoyed it, so will be trying that again.

    Overnight oats with courgette grated in (haven't tried carrot, but will now)

    Fried / poached eggs with peppers, courgette, mushrooms, asparagus

    A breakfast salad?

    Kimchi with bacon and eggs (or pretty much any veg)
    I wanna be in the room where it happens

    In case you were wondering if/how zucchini/courgette becomes part of breakfast, here's a possibly helpful article - whether being 'on trend' helps, I don't know, but the taste is addictive.
