    Mushrooms (don't have to be fried - in a bowl with a drop of water in microwave cooks them )

    good, too, cooked in the microwave with a drip of garlic puree and a few drops of lemon juice rather than water

    You could make any sort of frittata but cook it in muffin tins to make breakfast muffins.


    Incidentally I never fry mushrooms. Generally I bake them in the oven (although I wouldn't be doing that at breakfast time) or grill them alongside bacon.

    what about a risotto - just thought my daughter sometimes has one in the mornings. It usually has green veg: leeks, peas, asparagus in season, & spring onions. She adds in some grated cheese.

    I had the carrot porridge this morning. That will become a tasty regular. Has anyone tried it with any other veg? I love beetroot, so will give that a go.

    I can't believe I forgot BLT and will try it with spinach as ours is regrowing well now. There must be lots of sandwich ideas. I grow watercress, so cream cheese, watercress and cucumber would work.

    I can imagine eating left over risotto, but not cooking it from scratch for breakfast. Perhaps the answer is that all these things need cooking ahead like the frittata?

    you can grate courgette into porridge too.

    One of my favourite breakfasts is a tray of veg (any combination of tomato, pepper, radish, mushroom, sliced red onion, broccoli, asparagus, sweet potato) drizzled with olive oil, and roasted. Sometimes I put a slice of bacon in with them. Or add an egg at the last minute. But I'm quite happy with roast veg :)

    Mrs Wengerin loves an old Jamie recipe for brekkie.

    It's basically ratatouille with bacon an a couple of eggs broken into the top of it and cooked under the grill. I reckon that's easily 3 portions of veg,

    You could go with a simple veg juice, 6 tomatoes, 2 carrots and a stick of celery is very easy drunk.

    I would never have thought of that - I always add a spoonful of sunflower and linseeds, plus some fruit (usually grapes or banana), but carrot would be a great addition. I will try it tomorrow morning. Thanks for the suggestion.
