    4 oz butter
    2oz caster sugar
    1 egg
    1/4 pint milk
    oil for frying
    extra caster sugar

sift flour salt and spices into a bowl
rub butter into flour until mixture resembles breadcrumbs
    add sugar
beat egg with milk and add to dry ingredients
    mix to soft dough
    knead quickly until smooth
roll out to 1/2 in thick
cut out rounds remove centres ,re-roll and cut into more rings
fry a few at a time for 2-3 mins each side
    toss in caster sugar

these are gorgeous on there on own or to dip in a choc fountain

These sound YUM and I have most of the ingredients :jCould I leave out the mixed spice? And use normal sugar? Also do they need to be deep fried or could they be shallow fried?

    Thanks for the recipe!

yes you could leave out the mixed spice ,normal sugar is fine i have used normal sugar ,i suppose the could be shallow fried but they do expand a bit so i would make sure you had a good inch of oil in the pan a wok might work ok .

they are very moreish this make about 18 if you do normal sized ones

A Pavlova or roulade would probably go down well, they look impressive too. Not sure how moneysaving though :d Although I don't suppose they'd be that expensive to put together really?

    - Home made chocolate brownies? Very rich so can be cut into tiny pieces.
    - Home made muffins or mini muffins?

I have the same thing at work, except we get rostered for morning tea duty hehe. The plate thing is annoying sometimes though....

I have been known to make fudge, this is pretty cheap actually and YUMMY

Try one of those cob type loaves that is bread (could breadmaker/ make your own) and then hollowed out and filled with a cheesy type mix (google for some recipes - cob loaf)

I have a friend who always makes her own sushi and you don't have to use smoked salmon (though the scraps can be cheap and no one would know hehe) but can just use tinned tuna or vege option with avocado. Never tried myself so not sure how OS but look very impressive...

Cream puffs - the basic recipe is very cheap and then you just need a bit of cream to stuff them with and a drizzle of chocolate icing, these can look pretty impressive piled up

Make your own bread sticks and top with a variety of toppings: cheese, poppy seeds, sunflower seeds, seasame seeds, whatever you have really, these can look pretty nifty with a dip to compliment

Make your own mini pizzas and top with a simple pasta sauce type thing (or blitzed tinned toms with garlic/ onion/ herbs added if you are feeling fancy) and a bit of cheese and a sprinkle of whatever you have handy, mushrooms, olives, feta cheese, cold leftover roast veges, you could always do a whole lot of different ones anyway. And if you don't want to make your own bases then you can use pita bread and cut into wedges.

You can try making some asian inspired chicken nibbles and serving these with dips, basic recipe is some chicken mince with some corriander/ chilli type additions and made into flat meatball type things then fried/ baked and served with a bought dip or just a bowl of sweet chilli sauce, I have a recipe for this somewhere, will have a look later....

A platter of chunky fresh fruit (seasonal and the kind that doesn't brown) generally best when melons/ pineapple/ grapes/ etc are cheap :)

Make some savoury type muffins, or even better mini muffins if you have the pans...

Stuffed mushrooms, can stuff these with some stale bread crumbs/ bit of onion/ herbs/ and a bit of butter...seem fancy to people...dead simple...get sooo many compliments on these

A friend at work once got a cheap sponge cake, cut the pieces in half again, so she had four big thin pieces, topped with a nice thick yoghurt (low fat option lol or just use cream) and topped with berries (could use frozen) and this looked and tasted fantastic...instead of having four seperate ones you could layer then up too, that would look pretty cool

Make kebab type things on wooden skewers- this can stretch a few meat and veges and make them look like more than it really is, things to try, onion, mushrooms, most meats especially diced beef/ chicken, zuchinni, capsicum, etc and marinade them in something simple (for kids parties you can skewer lollies this way, :) but you dont cook those hehe)

Oh, and if you are thinking pudding type things, try making a shortcake, favourites of mine are pineapple (heavenly) or apple. Pretty cheap to knock up, and just sprinkle with icing sugar after cooking and cut into pieces...

HTH someone, cheers all, and happy entertaining lol :p

    Hey Folks,

I'm having my parents around next Sunday for mothers' day, first time in my new house :j

Not really sure what to present them to eat - was thinking nice bread, ham/beef, coleslaw, salad, crisps. Followed by, banana bread and Blueberry Muffins.

Any other suggestions as obviously, being mothers' day and their first tea at mine i want to make it good!

    Thanks in advance,
    Ali x

  • Some nice salad would be good - especially if the weather's as gorgeous as it is this weekend!

Things like crudites/vegetable sticks with dip is always nice for snacking on before the main course, as are nibbley things like crisps, nuts, maybe little crackers....

For pudding, you could try doing fruit kebabs - pineapple, peaches, banana, apple, mango etc would be lovely grilled! Good way to use up old fruit too ;)

Hope that helps hun, sounds a lovely Mother's Day to me! I'm long-distancing it this year :(

Sounds like your aiming for a traditional 'high tea', nice one!

Home made potato salad is always good - buy a bag of washed new potatoes, cut any big ones in half and boil in salted water til just cooked, not too soft. drain and leave in the colander to go cold, cut up into small chunks, add some finely chopped spring onions or chives, onion salt and black pepper and mix it all up with a generous dollop or two of mayonnaise and a squirt of salad cream (if you like it, I feel it adds an extra flavour).

Pickled onions and beetroot are always good, hard boiled eggs, a couple of different cheeses, sausage rolls or mini scotch eggs - all depends how much they can eat really.

How about a 'retro' trifle to follow or what would be really nice is jam and cream scones and a pot of tea.
