My daughters vegetarian, her favourite Sunday treat is Sarah Browns cheese and lentil loaf. Recipe here:

I make it with less cheese and omit the cream completely though.
It's really good hot, or cold with salad.
Thanks for this it was lovely. Added some extra bits (garlic powder, mixed herbs and mustard) and it was delicious. Also made cauliflower bread sticks which tasted just like cheesy garlic bread.0 -

I'm doing lent this year, and thinking of giving up treats that come 'in a packet' - in other words, cakes and biscuits that I bake myself are fine, but my current diet of mini curly wurlies is not.
If you can get hold of an old cookbook classic 'More With Less', it's got some great veggie recipes. Chickpea tagine and shepherdess pie (which has a base made with red and brown lentils, a tin of baked beans and tomato and brown sauce) taste really good.
I'm doing lent for religious reasons (so I get Sundays off!). And my chief practice this year is to be more compassionate with myself. Lent isn't, primarily, about deprivation, it's about growing to be the best version of yourself. Which is worth keeping in mind when you're denying yourself that chunk of steak.0 -
I think this is a great idea New Shadow. Hopefully you'll enjoy making different meals and thinking about your food differently.
It may take your gut bacteria a little time to adapt to the different diet, so don't introduce too much in the way of pulses in particular too quickly (likewise don't binge on meat at Easter!).
Greying Pilgrim who posts on DFW has a wonderful diary with links to lots of fabulous vegetarian recipes on it which might be good for inspiration.
I'm trying to decide what to give up and take up (I like to do one of each) for Lent. I think it's going to have to be giving up sugarand taking up running again. I need to kick start my return to my normal healthy lifestyle after a break and this might just be the answer.
