Some more veggie options for the list:
- Spanish tortilla - cook potatoes and onions, plus any other veg you fancy (peppers, mushrooms, sweetcorn are great) - I just ping in the microwave. Then heat oil in a large pan, and saute the veg briefly before adding eggs - probably six in a big pan. Add whatever flavourings and seasonings you like - smoked paprika and garlic usually here. Cook until the bottom is set, then put the pan under a preheated grill to make the top golden and fluffy. A six egger makes about 4 servings, but you can adjust to your needs.
- Bombay potato. Heat oil in a pan and cook off your spices - mustard seeds, fenugreek, garam masala, turmeric. Add diced onions and cook until soft. Meanwhile I like to ping some potato slices in the microwave to speed things up, but you can add them to the pan raw. Add the potatoes and a can of tomatoes to the pan and cook until everything is soft and unctuous. At the end, pop some spinach on top, and let it wilt in. You can add other veg: carrots, sweet potatoes, parsnip, peppers, maybe? Great with flatbreads (just flour and water mixed to a paste and cooked as a damper) and yoghurt.
- Catalan Bean Stew. Saute onions and peppers until soft with smoked paprika and garlic. Add tinned tomatoes and a can of mixed beans (also works really well with cannellini or borlotti). Heat through and serve with rice.
I'm going high protein, low carb for Lent. A bit different from my normal eating patterns, so I'm adopting the wise counsel from greenbee and working my way in slowly. OH is doing his customary no chocolate, but I don't eat enough of the stuff to make it any kind of sacrifice.0 -

I decided to give up buying books for 2017 and just get books from the library. Kindle books can be lethal, so easy to click and buy and even though I usually only bought cheap ones it can add up very quickly! When I had a proper look at my Amazon order page for last year and added it all up I had to have a sherry to calm down :eek:
So far not buying any books is going okay, but I am 5 minutes walk from the library which really makes it easier.

When I was a student I had a book called "The Four Seasons Wholefood Cookbook" which I found on amazon recently from 1p! My favourite recipe in there was a veggie lasagne which was delicious. Try here: 4 Seasons Wholefood Cookbook
Delia Smith's "One is Fun" has some good vegetarian recipes in it incl. a Sri Lankan egg curry.
My other favourite is portobella (sp?) mushrooms stuffed with garlic cream cheese, peppers and onions, topped with breadcrumbs and Gruyere and baked in the oven.

Quick question - couscous...
100g of cooked couscous is apparently a portion but how much dry couscous makes 100g of cooked couscous? (and can that be translated into cups?)
Tesco wholewheat couscous - if it makes any difference.
Planning a couscous/bean salad for lunch in the week.

I can't answer this because I never weigh it - always do it by volume (twice water to couscous). But what seems like a small amount of dry couscous becomes a huge mound once hydrated! Plus you will be adding stuff to it.Quick question - couscous...

I agree with 35mls. i use 70gms of dried and 140mls of water for 2 generous meals for 1 person. Cold cous cous microwaves well, you might like to freeze half for a future meal?0
