DAY 8/44
Very quick because I need to crash.
Skipped breakfast. Lunch cheese butties and a bowl of sponge and custard (needed the sugar), dinner a kind potato hash with some sm diced pots and scraps of veg with curry spices and mango chutney and a sm 'indian' snack pack.
Fine. not as nice as the one I made the other day, but that was probably practice with the spices. It was different enough to be interesting and I'd probably make again because this was dry and that was wet. Would be good for packed lunch. That sounds like a classic case of premature extrapolation.

Today was a CBA day.
Egg roll from a caff for breakfast, veggie 6" sub for lunch, and just a bowl of buttery mash for dinner. Meal out tomorrow and Saturday with dad so not the end of the world me thinks.
Sub (in case anyone doesn't know what they look like). No idea what's actually in it, but it was that or a burger:
Didn't taste much of anything but filled a hole. That sounds like a classic case of premature extrapolation.

As a good addition - i also lost 3lbs too...Need more to go, but am OK with that so far.
All have a good rest of the day.

Congratulations on your temporary vegetarianism (I swapped to vegetarian at 18, vegan at 19, back to vegetarian at 25
I love eggs too much). DH is, voluntarily, cutting out land meat and going for watery meat (i.e. fish) only - and enjoying it very much. Partly because he's got me cooking for him, and I've only ever cooked veggie!
I've given up lie ins for lent. It isn't going so great, I've hit a bit of a stumbling block and am currently getting round it with silly things like waking up at the allotted hour, but then doing banking on my phone, reading a book, playing with the cat, or bringing a cuppa back to bed at the weekends! That doesn't really count does it?!
NewShadow, just a quick suggestion from me about chickpeas, roast them in olive oil with some seasalt and rosemary for something a little different that isn't too taxingDebt free as of 28/03/2017 (just don't ask about the mortgage :rotfl:)

Just popping in to see how you're getting on. I have found this Lent really quite hard, glad to see you're all hanging in there0

Hello! Well done for hanging on in there despite terrible buffets (I feel your pain, I've suffered plenty of those myself).
Here's a nice easy recipe i use a lot - i add a tin of chickpeas and a bit more chili and it's lovely and filling.

BBC good food website is also good for recipes. There's one i used to make loads called Hearty Mushroom Soup which is delicious if you like mushrooms. Sorry I can't add another link without losing this post for some reason.
If you've got some ready made puff pastry you can make easy tarts by cutting into whatever size you want, put some pesto on , top with thinly sliced tomatoes, a little grated strong cheese and drizzle with oil. Bung in the oven at 200 for about 10 mins. Serve with salad or veg. These are also good with caramelized onions and small chunks of either goat cheese or feta.
I also make a soup by frying onion and garlic, adding a diced butternut squash, a bottle or can of cider and some stock to cover. Cook until soft and then blend. Add as much liquid as you like to make it as thick or thin as you like. It is so simple but completely delicious!
Hope that helps and good luck!0 -

Day 2/44 I had leftover dahl, rice, carrots and cabbage for lunch, dinner was sugar snap peas on the run.
Day 3/44 was salad for lunch, dinner last night was meant to be stuffed mushrooms but I was too hungry to wait so I had a large Waldorf salad instead.
FWIW: I take carrots out of the plastic bags and store on kitchen roll in the salad drawer of the fridge.
Is it possible you're storing your carrots close to gas-releasing veg or fruit? If you're keeping any of these next to your carrots, it will speed up their decay rates - a bit like keeping onions next to potatoes will cause the potatoes to sprout quicker.0 -
That's exactly what I do with carrots. Take them out of their bag, wipe any moisture from them with kitchen roll and then put in the salad drawer that has a layer of kitchen roll lining the bottom. The kitchen roll layer will need changing after around 4 days and definitely before adding any new veg to it. My carrots last more than a week before going off.
It works very well for berries (I've kept strawberries in the fridge for a week this way) which is useful as they can be expensive.Value-for-money-for-me-puhleeze!

NewShadow - I forgot I could have mentioned a favourite of mine; tofu bacon!
Block of plain ol' tofu, wrap it in kitchen towel and press to get as much of the moisture out as your patience will allow, then cut into strips no more than 5mm deep. Marinate in a good slosh of soy sauce, make sure it's covered all of the tofu (a dinner plate with a lip is good) and my personal favourite is to sprinkle a generous few pinches of smoked paprika on top. Leave to marinate for as long as your patience allows (again), overnight is good. Fry the strips in whatever oil you use. Nice in stir fries, brunches, I had some leftover and bunged it in some pasta with oil and greenery last night - it filled a gap!Debt free as of 28/03/2017 (just don't ask about the mortgage :rotfl:)
