Putting aside the anti-police conspiracy theories (targets etc) the police usually have video in the car, if they were behind and saw OP driving along for a sustained period without holding the wheel or were coming the other way and saw it and it's on video then it's a bit different.
No camera or recording equipment in the police vehicle.
They were stopped at the red light of a junction when I drove past. Shortly after I could see blue lights a few cars back, so indicated and pulled over to let them past, however that's when they pulled in behind and signalled for me to go round the corner.0 -

Of course not.
However, and this is the crux of the matter, I only use it when the road permits. IE, no bends, corners or turnings approaching. Hand to mouth coordination is a gross motor skill and doesn't take away any observation from the road and surroundings ahead.
Unlike say for instance, someone looking over at the radio to change stations etc0 -

I completely agree with you mate, theres nothing wrong with smoking / vaping while driving. It doesn't affect your vision and doesn't affect your control of the car any more than changing gear or winding down the window or scratching your chin or anything else.0

You are missing the point. No seat belt / using a mobile phone is an easy hit.
All the police officer has to do is say they saw it, no further evidence needed.0
