    Make sure it's not foil directly next to the cake. We did that once with a pudding, and when we came to eat it, the pudding had eaten through the foil. I had to chuck it as the risk from ingesting the aluminum was too great :(

  • Hi, I want to make Rustie Lee's christmas cake, and the recipe calls for 1 bottle of 'Ruby Wine' (to soak the fruit in) - is this ruby port? Or just any red wine?

    If anyone can advise I would be grateful!

    Port is a fortified wine, ie more alcohol (fortified with brandy I think) . I seem to recall my mum and dad having ruby wine at Christmas instead of Port. My impression is that Ruby wine is a similarly fortified wine to port, but not from Portugal and therefore not entitled to go by the name port.


    I'm ready to stand corrected though, not completely sure!

    It is ruby wine you need and the only place I could find it is Tesco

    I made my very first Christmas cake a couple of months ago and now need to deal with decorating it.

    Could anyone tell me the quantities for a 10" square cake when making the almond paste, I have bought the ground almonds but am not sure that I have enough.
