    I use these..

    shortcrust.

    225g (8oz) Flour
    110g (4oz) Butter
    25g (1oz) Caster Sugar
    2 Egg Yolks
    ½ tsp Salt
    1 tbsp Water
Sieve the flour, sugar and salt together into a bowl.
Cut the butter into 1.5cm (½ inch) cubes and rub lightly into flour, lifting the mixture to add air, until the mixture resembles breadcrumbs.
Mix the egg yolks and water together in a separate bowl.
Make a well in the middle of the mixture and stir in the egg yolks using a knife, until a soft but not sticky pastry is formed.
Cover tightly and allow to rest in a fridge for 15 - 30 minutes.
Roll out to the required thickness.
At this stage the pastry may be frozen if required.
It should be baked in a preheated oven at between 190°C: 375°F: Gas 5 and 220°C: 425°F: Gas 7 depending on thickness and use

    puff

    225g (8oz) Flour
    225g (8oz) Unsalted Butter
    1 tsp Lemon Juice
    ½ tsp Salt
    Cold Water
Sieve the flour and salt together into a bowl.
Make a well in the middle of the flour and add the lemon juice, stir with a knife adding enough water to make an elastic dough.
Place on to a floured surface and knead gently for 5 minutes until the dough is smooth and does not stick to the fingers.
Roll out the dough to form a piece large enough to cover the butter, then place the butter (straight from the fridge) in the middle of the dough.
Fold over the ends over one at a time.
Flatten in one or two places using a rolling pin, then roll out gently and evenly into a long strip, ensure that the butter does not come through or comes from between the edges.
Fold one third towards the middle, then the remaining third into the middle to form three layers, pressing down gently, do not seal the edges.
Leave the pastry to rest in a cool place for 15 minutes.
Place the pastry on to a floured surface, so that the unsealed edge is towards you, roll and fold again as before.
Turn and repeat three more times.
Leave the pastry to rest in a cool place for 10 minutes.
Place the pastry on to a floured surface, so that the unsealed edge is towards you, roll and fold again as before.
Turn and repeat three more times.
The pastry is now ready for use.
It should be cooked in a preheated oven at 230°C: 450°F: Gas 8 for approx. 10 minutes.

    Morning all

Two loads of washing on the line, including the throws from the living room, and blowing well.

Done bathroom and toilet (can't be bothered to work out what level) - I'm satisfied ;)

I cleaned the computer desk on Tuesday (it's in the hall) and I defragged it yesterday morning.

It's damn cold out there today but lovely and sunny.

I have done something - Yeah! Didnt involve moving from computer though:rotfl: . After 2 years of it not working I have phoned bissell and arranged for my proheat carpet shampooer to be fix. £68 including collection, delivery, full service and fault fix or machine replaced with another reconditioned one:T .

Littley collected from nursery (2 jobs in one - he he he take dog with me) now I need to go into the garage of doom and find the machine and parcel it up for collection tomorrow, wish me luck. May dig out some stuff to ebay while I am in there. RAC car buffer or car vac anyone??? Got them as free gifts when we bought the pressure washer and there is no chance of hubby using them so may as well flog them;) .

Maybe a coffee and some lunch first, and a big jumper it is blooming freezing out there today:eek:

The pie's in the oven but it doesn't look none too clever. Did the mix wrong, only added 1oz of butter instead of 4 then added half a cup of water cause it wasn't sticking :rotfl: :rotfl: it's as thin as a sheet of paper and half the fillings melted through it - it's hilarious I so should have taken a pic :D will feed it to OH he doesn't care lol
