    You'll have given me my topic to ponder on for the day PN - re "saying what I think". I tend to think that that's fine, as long as it's combined with the not "following like a sheep". I don't really see it as to why people would ever feel hurt from someone just expressing their opinion - unless they are doing it deliberately with the specific intention of upsetting someone else. You say what you think - but it is just expressing an opinion and not done with deliberate intention to hurt iyswim and that's fair enough.

    If someone is a "sheep" and says what they think - then that results in the words other people are thinking coming out of their mouths. At that point - one can probably figure out just whose opinion they are spouting as if it's their own and it's blindingly obvious usually on forums ("Oh yes...that came out of Mrs A's mouth - but it's Mrs L's opinion").

    So - saying what one thinks is fine - provided it is one's own opinion.

    I think that's what people like about you PN. I've never yet seen you spouting someone else's opinion. It is always your own opinion that you come out with and not one you've been "put up to" by someone else. If sometimes it sounds a bit harsh - we know it's not meant to be nasty. You're saying what you think and that's fair enough - but not deliberately out to "wound" iyswim.

    I'm not so sure about the "chirpy/upbeat" either. I know a few people that just are naturally sunny souls. Most of us are more "up and down" than that and that's fine. I see no reason myself not to "tell it like it is" and give an absolutely straight take on life - so personally I'm just thoroughly straight on "There's good days and there's bad days. Personally I don't actually want a life on Planet Earth - but, since I'm here - then I'm making the best of it whilst I'm here - but I'll be glad when it's over and have a darn good party up there on Cloud Nine to celebrate". You're invited...

    It's in the delivery. Post your opinion as your opinion but when that opinion is expressed in such away that puts down those who don't share that way of thinking then it causes offence. Pouring scorn you see.

    Not every married couple are living it up on two wages. DH brings in our money to live off and I make sure we can use that money to it's full potential. I am a very strong married lady ;)

    Back to the subject of cooking for one eh?

    Fish pie and pavlova was a great success last night no leftovers bar a slice of pavlova which I will snaffle today. So today I think I am going to have some freezer bubble and squeak and I may tackle some flat breads to use the yoghurt up

    Yeah. I thought I'd killed it.

    I did bubble/squeak last week.

    How long do you reckon your Christmas leftovers will last? I was looking at my list today and think I could probably go another couple of weeks at least and thats not including all the extra meat I bought....note to self re Christmas food buying next year !! This exercise has been very eye opening about my shopping habits for sure:o

    Goodness lots of different views and experiences on cooking for one and living on your own.

    Nelski - glad the fish pie and pavlova went down well and only a slice of pavlova left to snaffle.

    Bubble and squeak one of my absolute favourites, I've finished up the ones I had frozen so might just need to "engineer" some suitable leftovers to make some more :D

    Christmas leftovers - how long is a bit of string? I've some turkey and gravy frozen which I'll have in a few weeks and some uncooked cocktail sausages with no specific plan though might make a pigs in blankets roast dinner the next time I have some streaky bacon. I still have some cheese but only a smidge of stilton and some brie that need using up sometime soon. I've half a dozen mince pies frozen - last year my kids ate loads of them and this year hardly any. I'll use these up gradually once I get some Instant Custard sorted out. I've loads of nuts though but BBE is well into June so hopefully will shift these and chocolates (got gifted some unexpectedly) I'm sure they'll get used or my son can have them for his workmates. Tonight I'm having steak pie made from the leftovers from New Year's day. I like festive leftovers as for me they brighten up the long, dark and skint days of later winter so happy to have them :)

My Christmas stash includes bags of cooked turkey, cooked ham, sausage and bacon uncooked, sprouts, roast potatos, couple more bubble and squeak (understand you engineering some though I would do the same :) ) smoked salmon, nuts, chocolates (really don't eat chocolates bar the odd one here and there so some of these are from Christmas 2015:eek:) Sadly no mince pies though so ill swop you some bubble and squeak for some mince pies :) loads of cheese and I mean loads and a partridge in a pear tree :D

    So all in all that may last me to Easter :o

    Lasting to Easter how wonderful :D I'll look out some bubblewrap for the mince pies wouldn't want to get squashed in transit. Happy to take the partridge and pears off your hands too :rotfl:

    ....and back on topic...one of the ideas popping up a lot in the most recent crop of "cookbooks" is the one of having a major session per week (say on Sundays) in which one preps the basis of food to eat for the week.

    There's elements of that that can be taken on board imo.

    Personally - I want to prepare my salad veggies for instance literally minutes before I eat them - in order not to lose a scrap of "nutrition" (vitamins/minerals/etc) from them. With that - I wouldnt make up a whole batch of salads and put jars of them into my fridge as "Mondays salad", "Tuesdays salad", etc.

    However - I am starting to use that idea to some extent. That being to, for instance, make up a batch of roasted veggies that is enough to cover eating for several days. Say - a dip that is enough to last for several days. Some cooked grains that are enough to last for several days.

    So - for instance - yesterday I stuck enough chopped veggies of various descriptions in the oven to roast that I would hope that would be 2/3 portions worth (in that case it was sweet potatoes, cauliflower leaves and florets, carrots, garlic, onions). I also did a dip - this time an aubergine one. I didnt do any grains on that occasion (but think that might be a good idea to cook up a batch of something like couscous or quinoa or something at future batch cooking sessions).

    I'm edging in that direction. It's a work in progress.

    Then there's other "bits" that can easily be chucked into a "mixed" type meal like that. In my case - then that might be something like a handful of nuts, a helping of sauerkraut, some olives, some salad, etc.
