Cooking for one

    I'm off to the butcher's still not sure what to get, hopefully inspiration will strike when there.

    I am usually cooking for one but when one of my daughters comes over and sometimes stays overnight then I make a bigger meal like lasagne, curry, cottage pie and then freeze some. I freeze things in small microwave and freezer safe lidded containers so they are handy to grab.

    Not doing a lot just now as I have been at the hospital on Monday and Tuesday for tests and scans only to find I have blood clots in my lungs so have to take anti coagulant tablets , stay hydrated etc.

    I got an actifry for Christmas(reduced in sale) and it does good chip and sausages. I put a breaded fish in it last night rather than use the oven and it tasted fine.

    Just found out that dds and son in law are coming round tomorrow for lunch which will make five to cook for. Not sure whether to make a large cottage pie with veg on the side or a lasagne or just do dinner party chicken ( chicken breast sliced horizontally, stuffed with cheese, garlic etc and wrapped in bacon) with roast potatoes cooked in Actifry, small home made yorkies and green veg.

    Whatever I decide to cook it looks as if I will need to go out to nearest shop for potatoes and veg. I love to see them and it is probably good for me to be cooking a family meal tomorrow rather than something like egg on toast etc.

    Think I will have a rummage in the freezer, take out chicken and mince to defrost and play things by ear knowing I will need to just do a little bit at a time.

    Hi elona welcome to the thread - sounds as though you have a lot on your plate healthwise so I'd just make what you find easiest for your guests tomorrow as your menu chioces all sound lovely. It's nice to have guests to break the cooking for one routine and I tend to make things when I have folk round that either work better in larger amounts or seem like too much faff to make for myself. Whatever you decide don't over do it so you can enjoy your time with your family tomorrow without making yourself more unwell :)

    I am not 'Cooking For One' today...I have friends coming over tonight so it's wine and Indian take away for 3 :j:j:j

    Can't wait and feel like I can justify the expense seeing as I have visitors (a rarity) and they want curry too.

    I will probably spend all day reading the take away menu deciding what to have, then as usual, change my mind at the last minute :rotfl::rotfl:

    Trip to the butcher's was successful, got a bit of topside which will make a nice roast tonight and provide some meat for the week. Also got a couple of sweet chilli sausages and a couple of basil and tomato ones. Not had the latter before so hopefully they're as good as their others, they're very proud of their sausages although many butcher's tend to be in my experience.

    Also went to the green grocers, got some coxes orange apples and some oranges that look a lot nicer than the ones in mr T last week. Also got some beets to boil up, I do like making beetroot and goats cheese salad, although currently don't have any goats cheese. Do have brie, Wensleydale and a sage derby though so not sure I want to buy more.

    Off the subject of food when walking down the lane between the villages there was a whole load of knickers scattered across the path, which is odd enough in itself but it's the third time this year it's happened and I don't recall it happening previously in the 4 or so years I've been here. The first time it happened I figured someone had a bag of washing split on the way to/from the laundrette/dry cleaners and didn't want to stop and pick them up, but that can't keep happening surely?

    Off to the library now, might treat myself to a cake in the baker's whilst I'm out.

    Just had a lovely brunch of scrambled eggs with asparagus, mushrooms and cheese through it on toast makes it feel like the weekend :D
