  • Another nice loss on the scales this morning - 2lb this time :) Typical me losing weight when I'm not signed up to the challenge, my brain works in odd ways! Congrats losers and SOTW so far this week :T

    Sadly I can't really thank SW for my loss this week. I had toothache all weekend and lost my appetite completely. Managed to get an emergency appointment at dentist on Monday who ended up pulling the tooth out that was causing me agony. Am still in pain now but a different kind and it's at least manageable with painkillers. But my appetite is still less than it was, but I'm eating porridge and soups which is something.

    Here's to another loss next week (hopefully SW related :D)

    Question for Maman and any other speed queens (or kings) out there.

    I'm on my placement tomorrow and I haven't mentioned SW to them yet as I'm quite new.

    If I have the following, I'll be about right for tomorrow, won't I?

    B - Mushroom and pepper omelette (2 eggs) and half a tin of plum tomatoes

    D- Ham and laughing cow blue cheese sandwich, apple and banana (2 syns, HEXB and 1/4 HEXA)

    T - Cottage pie (has mushrooms and onions in and about 1 syn of gravy granules/mustard per person), swede and green beans.

    Syn saving for my Christmas treat on Sat :) so I'll have a 2 syn hot chocolate before bed to bring me up to the 5.

    Your menu looks fine. Breakfast is EESP. Lunch is close although better to have other than banana. . I'm assuming the rest of HEA is for drinks. Dinner's fine too as plenty of Speed to balance off meat and potato.
    Best of all you've planned it in advance and even better if topman is cooking the dinner! :D

    I have my banana at breaktime to stop my rumblings as I normally eat my dinner at about 11.30 at work at my desk because I breakfast at 6.30, but placement dinner time isn't until 12.30 and I can't function when I'm hungry :)

    Yes, there will be a couple of brews.

    Top Bloke is the king of cottage pie and he's on an early finish so he will be rustling one up as I sit on my bum, the lovely one (he's been on lates all week so I've cooked, it's his turn :) )

    2lb loss is good Kathryn, don't be too disappointed.. you've lost 8.5lb in 2 weeks! :T That's fab.. hope you can get through the weekend without too much damage. Sounds like you have a good plan.

    Sorry still can't get it in red.
    Pretty grotty week health wise.Nothing serious in the grand scheme of things.
    Just feeling sorry for myself.Realised that some daytime telly is better than the stuff that is on in the evenings.
    Kept to plan though so hopefully I'll have a loss next week.
    Can't remember the amount of oats to yogurt (going to try substituting milk) in the overnight oats.
    Can somebody help me please.

    Well done, Maisie, candyapple and kathrynha.

    Thanks, maman, I think I needed that break from being rigorously on plan that I had before Christmas. That mac ‘n’ cheese was the first the gang had had in weeks, believe it or not! We’ve had quite a variety of dishes - with varying degrees of approval/success, lol.

    Pre- Breakfast: banana
    Breakfast: kiwi, strawberries and apple with ff nat yogurt
    Lunch: beans on hexb toast spread with a triangle of Laughing Cow light cheese, melon
    Snack: shortbread finger (5)
    Dinner: turkey risotto (leeks, onion, red peppers), an orange
    Snack: 2 crackers (4), light cheese triangles & tomato

    Serves 4 as a full meal or six to eight if you are serving other dishes:

    The day before you want to eat it, season 2lb lean stewing steak and brown it, either in a non-stick pan or using fry-light. Do this in batches so that the pan isn't overcrowded. Remove from the pan and set aside. Turn the pan heat down to medium/low.
    Roughly chop 2 onions and 2 peppers (any colour but green) and fry off (again, using nothing or frylight) until they are just softened. Add an inch of chopped fresh ginger, 5 cloves crushed or finely chopped garlic. Cook for a minute more. Then add a stick of cinnamon chopped in half, 2 whole star anise, 1tbsp curry powder, 1tbsp chilli powder, 1 tbsp fresh lemon peel and 1tbsp cornflour (3.5 syns) Stir for 1 minute.
    Turn the heat back up, add the meat back to the pan, and add 100ml shaoxing rice wine (7 syns) and let it bubble away until the liquid has reduced by half. Then add a beef stock pot (or 2 oxo cubes) and 750ml water. Cover and turn down to a simmer. After an hour remove the pan lid and continue to simmer until the meat is tender (about another half hour to an hour). Keep an eye to make sure it doesn't dry out - add a litle more water if you need to.
    Once the meat is tender, remove from the heat, let it cool, then put it in a bowl in the fridge overnight. As well as letting you remove any fat that was hiding, this gives the flavours a chance to deepen and makes the meat more tender too.
    The next day: Skim off any fat that has formed on the top (whether or not there is any depends how lean the meat really was LOL) Put into pan and heat back up. Add 50ml light soy sauce and scatter with some fresh chopped coriander. Serve with rice and stir-fried veggies. Yummy!

    ETA: Fish out the cinnamon and star anise before serving if you can. If not, warn kids and the uninitiated not to eat them... I just remembered the time my frend tried to eat a cinnamon stick LOL
    . Oh wow! Thanks so much for that def going to give that a go sometime! Now I have to tell u I was ahead of myself lol it's actually the following weekend not this weekend is Chinese New Year! :o oops
