Here you go taplady. :jBeetroot, goat’s cheese and cranberry parcels.Serves 6 courtesy of Simon Rimmer400g beetroot1tbsp olive oil200g baby spinach, washed200g goat’s cheese, crumbled1small onion finely sliced1 red chilli deseeded and chopped50g dried cranberries500g block fresh puff pastry1 egg, beatenPoppy seeds for sprinklingPreheat oven to 190/gas 5 Put beetroot in a tin, drizzle with the oil, season well and roast for 45mins or until tender Cool slightly and remove skins.Meanwhile wilt the spinach for 2-3mins then squeeze out the excess moisture.Cut the beetroot into wedges then mix in a large bowl with the spinach, cheese, onion, chilli and seasoning.Roll out the pastry and cut into 6 x 15cm squares, divide the filling between the squares. Brush the edges with egg and fold in to make neat parcels.Place sealed side down on a baking tray, brush with egg and sprinkle with poppy seeds. Bake 15-20 mins until puffed and golden.Serve with roasted new potatoes tossed with butter and coriander. :TI use mild goat's cheese log, I quite like tha t but some of the stronger goats cheese is minging. :eek: I think you could use cheshire or some other crumbly cheese.0

i hope you're all having a great day - the highlight for me is that DS2(aged 15) has eaten his first ever roast dinner!:j he didn't eat the veg but for me it was great as usually he wont touch any of it! he had turkey, roasters new pots yorkshire pud and gravy!:T DS1(ages 17) wont eat it so had hash browns and bacon rolls( a late breakfast for him)
Am just having a coffee after lunch, am stuffed, washing up done etc and am off to Mums soon.
