Baking day...What to bake???

    I must be the only person on these forums who did not go much on Twinks hobnobs (sory Twink!). I thought they were a bit 'fizzy' and didn't really taste lke HobNobs....BUT I did only make them once, so maybe I should try them again.

  • I didn't have much luck with the hobnobs either. The first lot were just dry lumps of oats so when i tried again I added more water. They were better that time but a bit 'cakey'.
    So, i thought why not make them into a cake, so my next try I added a little more syrup and an egg to the mixture (half the quantities so 4oz flour/oats etc) and baked in a square cake tin. Not bad, comes out a bit like those soft oatbake things that cost a fortune in the supermarkets. Made more yesterday with chopped glace cherries and some dried mixed fruit. Am going to try cherries and walnuts next time but you could throw all sorts in there. Dried apricots would be nice too.

    I add linseeds, sunflower seeds, coconut and sultanas (among other things) to my twinks. I once managed to get 87 biscuits out of one batch as I make them small too. They're much more biscuity that way and very yummy!

    I have pretty much got meal planning sorted so want to move on to a weekly baking session in order to cut out any bought puddings/biscuits/cakes etc.

    I have a two hour slot and want to bake (mostly) nutritious things so that every one of the eight people in our family gets something each day. I need to cook things that will be freezable or will store.

    I haven't got a specific budget in mind yet but obviously want to keep the cost down.

    Tomorrow I plan to make:

    Banana bread (bread maker) - eat same day
    Yorkshire parkin - keeps in tin
    Carrot & apple muffins - freeze when cooked
    Raisin and oat cookies - going to try freezing the dough, not sure it'll work!
    Brownies - freeze when cooked


    Does anyone who bakes weekly (or not for that matter) have any thoughts on that list or any ideas for things next week that can be whipped up fairly quickly?

  • good idea, i tend to bake a couple of times a week, OH is a big fan of HM goodies and everyone at work loves the day after bake day too!!

    got to be twinks hob nobs! so easy, to make you'll wonder how you ever managed without them.
    weetabix cake is fab, (recipe on the grocery challenge thread, look at the beginning)
    weetabix brownies (recipe on the grocery challenge thread, look at the beginning)
    scones (can freeze and then nuke before eating or take out the morning you want to eat)
    custard cookies (recipe on the grocery challenge thread, look at the beginning)
    banana bread muffins, freeze so easily and if you nuke taste fresh baked.

  • Flapjack always goes down a storm here and I add all sorts of different things in to make it slightly more interesting; marshmallows, raisins, chocolate beans, dried apricots etc.

    Ginger cake is a nice one that will keep in a tin or fruit cake which keeps practically forever.
  • Hi there! I'll add this to the existing baking day thread so that you can see others' suggestions ;)

    How about bread? Flat bread, pitta, rolls, tear and share, cinnamon buns, chelsea buns, etc, etc. It'll take longer than your 2 hours, but if you have 10mins earlier on, you can prepare the dough and leave to prove until you need it. It can wait overnight in the fridge, if necessary :D
