Today I have baked 12 wholemeal breadcakes (large flat rolls) for DH packing up. I used 1.5lbs flour so about 50p for the flour and a bit of yeast.
Wholemeal date scones which we have with a coffee at home before we go shopping to save buying out.
Mincemeat brownies which will make several puddings served with custard, when the family come round.
12 yummy scrummy blueberry and apple muffins which look divine and were made with less than half price blueberries but in the future I am keen to grow my own.
All has been frozen away for future reference but how I would have loved to sample a muffin.

The recipe I use is out of Mary Berry's Fast cakes book:-
Making time about 10 minutes.
Baking time about 40 minutes.
6 oz (175 g) self-raising flour
2oz (50 g) solf margarine
6oz (175 g) dark soft brown sugar
1 egg
4 tablespoons mincemeat
Heat the oven to 350F, 180c, gas mark 4. Grease and line with greased greaseproof paper the base of and 8-inch (20-cm) sandwich tin.
Put all the ingredients in a large bowl and beat well for 2 to 3 minutes until they are well blended. Spread the mixture evenly in the tin and the bake for about 40 minutes until the brownie is firm in the centre and has shrunk from the sides of the tin.
Cool slightly. Cut into 12 wedges while still warm. Turn out and leave to cool on a wire rack.

I do crispie cakes - basically, the flapjack mixture with cocoa powder added, melted and poured onto cornflakes/rice crispies/broken biscuit pieces anything like that, put in cake cases and left to cool. Cheap quick chocolatey snack

I know its not a tray bake but does anybody have a recipe for gingerbread men? One thats more chewy than hard. I love gingerbread men and my kids get them so I can have one. Very sad, I know but I cant help it.

Twinks Hobnobs.
I made some with the rest of my baking. Definatley yummy. I noticed a couple of people had said they found them cakey so as they came out of the oven I presed them down with a fork so they were flatter and harder. Lovely and very moreish. I also did what somebody else had done and used half butter and half oil. This doesnt alter the taste they are lovely but I will use less oil next time. It doesnt need so much.:T £2.00 coin saver number 059
