    When I make a cheese sauce I use which ever I have in but it's always a strong cheddar hard type cheese.

    This is the best ever - I sometimes replace the parmesan with strong cheddar and it's fine - parmesan is quite expensive

    Warning - the recipe isn't particularly moneysaving or diet friendly but it is far and away the best macaroni cheese!
  • I add grated nutmeg and spoon of cream to my cheese sauce .... add a tin of tuna to the macoroni - this is yum!
    Then top with bread crumbs or weetabix crumbs.
    It really is delicious (if I do say so myself!) oh and cheap ;)

  • i made a cheese sauce the other day,i dont have precise measurements, but i start with about an ounce of flour and a little milk in a pan and whisk to make a rue add more milk gradually (about a litre )
    i also add a teaspoon of mustard and black pepper
    then i added about quite a bit of grated mature cheddar.
    it did make a lot of sauce though as i was making a huge bake for friends x

    If you have an Aldi nearby they are about the best on Cauli prices atm. 85p each instead of £1.45 Tesco and £1.50 Morrisons and Somerfield. Small, but then they all are at whatever price:mad:

    Made the Delia one last night without the egg so it wasn't souffled but it was delicious! Added brocolli, peas, sweetcorn and green beans to it x

  • I always add a half teaspoon of Colemans mustard to my cheese sauce for macaroni or cauli cheese. Parmesan is good but any old cheese will do if there's enough of it. I can't stand uncheesy, bland sauce.
