    Macaroni cheese is a weekly feature in this house just the basic one made with strong cheddar (need less) and then get creative whatever you have in fridge sometimes , leeks or cauli or broccoli or bacon bits, sliced tomato on top layer covered with grated cheese, i prefer it just plain but hubbie likes the bacon and leek version:)

  • I like fried bacon bits in mine and sliced tomato and cheese on top, before baking in the oven.

    my secret for good cheese sauce is cream, warmed gently, english mustard, grated v strong cheddar and sometimes lumps of edam which gently melt down, not in any way shape or form is it healthy, but its lovely, just keep stirring until its all melted in, too thick and add some milk

    i agree with above, add in different ingredients, bacon or tomatoes on top, but often, i love a cheese and pasta fest and just have it plain,,, also with a glass of white wine, so satisfiying

  • Im seriously craving Maccie cheese tonight for dinner (like most have made it a million times) thing is, havent got a lot of cheddar cheese (and cant be bothered to walk up to the shop to get some more..laziness.com!), but I have got a few tubs of Mr T's cream cheese..I was wondering if this might work in the sauce, or if it will curdle?

    anyone?

    I'm not sure if i can put the link on here but if you go to the Philidelphia website and search under recipes there is one that uses a mix of cream cheese and cheddar :)

    Cream cheese makes a great quick cheese sauce for pasta. I put a lump in a pan, add some milk and heat gently, stirring, adding milk until it is as thick or thin as I want it. Then you can chuck in cut up ham bits, cooked bacon, mushrooms, whatever you like to eat with pasta really. Salt and pepper to taste and you're done. I agree with Kate - the Philly site has some great recipes.

    I have done this with whatever kind of cream cheese, mascarpone,yoghurt - even cottage cheese but push it througha sieve first to get rid of lumps - that needs using up - a touch of mustard powder helps as well - think you do need a little bit of cheddar/parmesan though for it to taste like macaroni cheese as opposed to pasta in a creamy sauce - altho I make that too!

    Cream cheese is definatly a great thing to add to your sauce, I have recently become completely addicted to boursin and I put it into everything. It's especially scrummy in masked potatoes.
