Grocery Challenge JAN 2022 £200/£185.00 left!0 -
Thanks Thrift Wizard. Wow you've got a huge pot left! Well done. I cleaned out the understairs cupboard last week and found a box of 30 washing capsules! I have another unopened box in my regular cupboard and most of an open box. Given I do 2-3 loads per week I think we're good for about 6 months! Love the store wardrobe! Brilliant!0

Two NSDs. :j. I WILL minimise that overspend 😈
PP xOriginal mortgage £112,000 . Final payment due August 2027.
Mortgage neutral achieved August 2020 - 7 years early!!!0 -
Today was a grocery NSD but I had to pay the roofer to fix a problem before winter sets in, very reasonable price so I am pleased. However because of spending money I am not counting it.
Good night! Finally I'm an OAP and can travel free (in London at least!).0 -

Good morning,
Not going to do any grocery shopping but might not be a total NSD because tonight we are going to the exhibition of prints from DH and DD's art class, I am sure they will want a drink afterwards, and why not.
Meal plan: breakfast, DH special porridge with figs, nuts and maple syrup
Lunch bean soup and a fruit
Dinner pasta (gf) with broccoli, salad, apple compote with cashew cream.
Have a good day. Finally I'm an OAP and can travel free (in London at least!).0 -
Any butternut squash recipes - I would be so grateful - soup maybe. I find the ones i've bought very bland, but I have 3 that need using, plus broccoli, might do a soup with that also, not sure the 2 would go, but beginning to think that potatoes are bloating me, so kind of avoiding them, plus I don't eat meat/fish etc.
Butternut Coconut Rice from Appetite for Reduction by Isa Chandra Moscovitz:
https://thevegway.wordpress.com/2011/07/25/butternut-coconut-rice/
Ingredients:
1 c brown basmati rice (I used pink rice)
2 c water
pinch of salt
2 lbs butternut squash
2 tsp sesame oil
1 c sliced shallot
1 tbl minced fresh ginger
3 cloves of garlic
1 tsp lime zest
1/4 tsp red pepper flakes
1/4 tsp salt
3/4 c light coconut milk
1/4-1/2 c veg broth (I just used water)
1 tbl freshly squeezed lime juice
Directions:
Cook rice (add rice, water and pinch of salt)
Preheat oven to 400, bake squash for about 45 minutes
When squash is cool to handle, preheat a large skillet over med-high heat. Saut! shallot in the oil for about 7 minutes. Add ginger, garlic, lime zest, red pepper flakes and salt, saute for 2 minutes, turn heat to low
Scoop the flesh out of the squash into the pan, add the coconut milk. Use a potato masher (fork, what have you) and mash into a creamy consistency. Add rice and stir well. Add 1/4 c veg broth (or water) and mix well. You can add up to another 1/4 c of brother to get a creamier consistency if you want. Add lime juice, salt if needed and enjoy!I’m a Forum Ambassador and I support the Forum Team on the Old Style, Crafting and Techie Stuff boards. If you need any help on these boards, do let me know. Managed to hold off till Sunday for the reductions again this week but must admit to feeling decidedly twitchy and wanting to go shopping as usual on Friday just because its what I usually do.
Spent £1.65 o ys veg, there wasn't any fruit this week so spent £2.20 on Satsumas, bananas and plums.
So £3.85 on what I actually needed but then spent £6.00 on 4 packs of two gammon steaks and two packs 1kg cooking bacon. that wont be needed until the newyear but were to good to miss.
Total £9.85 15p under my budget for week 2Slimming World at target0
