rice salads with lots of fresh veg, seeds, nuts and diff dressings to mix it up a bit
corn tortillas with any type of sarnie filling - shredded chicken, pulled pork, beans if you want to stick to mexican style stuff but other stuff woudl work

I'm almost the same as you apart from I can wheat! But I suffer from severe IBS and a dairy intolerance.
With dairy products if you haven't already tried the Lactofree range then you really should. It's amazing! They do milk, cheese, soft cheese and yoghurts and they all taste like the real deal because it is milk they just take out the lactose which is what makes people sick! I can't stand soya milk so I was so happy to find it! Thought the yoghurts aren't as good as the alpro soya ones...
Anyway I’m trying to think what I eat for lunch - in the winter I just eat a lot of soups mainly, and jacket potatoes. But now it's warm I bring salad. I make it the night before with lots of healthy stuff, add some chicken and then pop it in the fridge ready to pick up and take in the morning.
Beans on toast too but I don't know if you've found a suitable bread alternative. Jacket potato with Lactofree cheese... Leftovers.. Pasta. Rice. Cous cous.
I could probably think of lots more if my brain was in gear but hope that's of some help.
I struggled for ages with IBS and what I can and can't eat and found that worrying about it made it ten times worse so I’m much more relaxed now and I do try new things that I was too scared to do before so I can be your guinea pig0 -

Ok - the book is 'Food Allergy Survival Guide', Melina, Stepaniak and Aronson. This book is brilliant and has all kinds of recipes from bread to quiche to cake!!! It has basic stuff like spreads for sandwiches which are not only good for you but very MSE!!

Re the Lactofree range, it's not always the Lactose that makes people ill. I have IBS triggered by a milk protein allergy, so you may need to find out exactly what part of the milk you're intolerant to.
For cheese alternatives, try hard cheddar style goats cheese (if you aren't intolerant to goat products) or soya based 'Cheezly'.
For soya milk, I find that tesco value/sainsburys basics are best as they don't taste as strong as Alpro etc which I can't stand.0 -
I would agree that Genius bread is hands-down winner as far as gluten free goes, and Tesco's free from pasta is a good standby. However, I try not to eat processed food, so I basically just cook extra each evening and then take it for lunch the next day. If there's extra food and I'm not going to work I have a supply of little pots that can go in the freezer and I freeze it for emergencies. Otherwise, a big salad with plenty of protein fills me up. And have you tried different grains like quinoa? Very nice cold with snips of tomato, onion and cucumber in it.0

Ooh, yes quinoa is brilliant!! You could also try things like beans and lentils to bulk out salads if they leave you feeling hungry (like they do me)0

Out of interest do you know your blood type?
I'm better on spelt than wheat (it still has gluten in) so bake my own bread, cakes etc. I seem fine with small amounts of goats milk too so. There are some great goats cheeses (Morrisons do one called drunken goat which is lovely) and I'm also fine with sheep cheese like manchego.
Good luck. I find it all falls apart when I don't plan ahead.
Can you have oat cakes? I tend to fall back on those and rice cakes with either goats cheese or jam depending on if I want sweet or savoury.The birds of sadness may fly overhead but don't let them nest in your hair0
