  • Here's that receipe - they e-mailed it through to me yesterday.

    Banana Cake

    1 Large Banana,mashed
    275g/10oz Glutafin Fibre Mix
    2.5g/1/2 teaspoon of bicarbonate soda
    110g/4oz caster sugar
    110g/4oz soft margarine
    2 medium eggs
    2.5ml/1/2 teaspoon vanilla essence

    Place all ingredients in a bowl and mix well.
    Pour into a 20cm/8" square cake tin, 1 litre/2pint loaf tin or a
    900g/2lb loaf tin lined with non stick baking paper.

    Bake in centre of pre heated oven 190C/375F/Gas Mark 5 for about 45
    minutes until golden brown, firm to touch and a skewer comes out clean.
    Remove from the tin and cool on a rack.
    To store: Wrap in foil and keep in an airtight container.
    To Freeze: Wrap and freeze until required.

    As you can see it's really simple!

  • Forgot to say, when you eat it slap a bit of butter (or any other type of butter like spread!) on it. My non GF work mates really enjoyed this when I made it for them and couldn't believe it was GF!

  • I am also interested in this thread. I was diagnosed with coeliac disease a couple of weeks ago. I have been eating Ener-G bread this week which is edible but, like other GF breads, is tiny! I suspect it is full of chemicals though. I have ended up snacking a lot but at least I am putting on the weight that I lost.

    Does anyone make gluten free bread using a breadmaker? If so, how does it turn out? Do you freeze it?

    I have got a microwave at work and was thinking of making soup on the weekend for Monday and Tuesdays...

    Good to find some fellow coeliacs/gluten free bods on this board :)
  • I second the recommendation for Orgran pasta, it's fantastic. I have a microwave at work so I sometimes take cooked pasta and sauce, or curry and rice, or chunky soup, or a potato and a box of filling. However my favourite lunches are bento-style - see the following examples for inspiration:

    Sounds good to me - my 20 year old SIL is a coeliac and stays with us a lot in uni holidays. I try to feed us all GF meals when she's here as its easier and keeps down the risk of 'cross contamination' (I'd never forgive myself if I made her ill!) so would be very interested in any tried and tested GF recipes. :)

    Hi, I need help I can't stop eating chocolate at work, been eating either 2 - 3 small bars per day (40g) or the DS Crispy Bars in the same quantity. The chocolate bards cost me £1 for 5 in Alid or the crispy bars are £1.79 for 6 (but have been getting them at reduced price of £1.44). The problem is my tummy is starting to get a bit bigger now (with all the chocolate) and I can't stop eating. Any idea's I'm afraid I'm a bit fussy as well as being Gluten free don't like nuts or raisins. Please help.

    How about corn cakes with marmite or banana, popcorn (you could make some the night before)fruit, veggy soup, crudites, yogurt or yogurt drinks. I find actual lunch times more of a problem when I'm out, usually have to end up with a baked potato!

    I find lunch quite easy as we have a microwave at work, so its last nights leftovers. We only go for meals out if we know where we're eating is safe, we had a lot of day trips in the summer, so took packed lunch usually consisted of Chicken, salad, dips. Just find snacking very hrd as quite fussy and chocolate isso easy and convienient, but if I eat much more will have to buy new clothes.
