Hi All
I have decided to try cutting out gluten from my diet to see if it causing/contributing to the bloatedness and tummy pain I seem to be increasingly suffering with.
I do eat a LOT of bread normally and I usually have sandwiches for my lunch at work. Therefore I was wondering if you creative old stylers could help me with my ideas for sandwich/gluten free lunches for work ?
We do have a microwave to use at work.
Any ideas would be much appreciated as I really want to stick to eliminating gluten from my diet for a while and I've heard that the specially made gluten free bread is expensive and does not taste like 'normal' bread all

GF lunches are hard - I'm supposed to follow a GF diet as I'm coeliac. I can do really well with main meals but fall apart with lunches and snacks. I'm going back to work tomorrow after 3 months off due to not sticking to diet !! so must try harder. So far I havent got anything done for tomorrow but a microwave at work helps. If cooking things like chilli curry sweet n sour etc at home why not make extra and make up small portions to keep in the freezer to micro at work. Rice salads can be nice made to your own tastes, try your chemist for GF crackers and bread (ask the chemist about the GF FRESH bread which is better, I get it on prescription when I can be bothered so dont know how much it is, and it freezes ok), which I top with cream cheese and sliced strawberry or kiwi's. Am going to try some GF baking this week so if you PM me (I'm a bit scatty and have a head like a sieve so wont remember) I'll let you know if any are successful enough, altho its likely to be sweet stuff Mmmmmmmm..... I'm also coeliac and am always trying to think of nice things for lunch. Kazmeister has come up with good ideas. I like the lifestyle bread rolls which you can buy over the internet and freeze - just remember to pull the roll out a couple of hours before you eat it! I normally have rice salads in the summer; I haven't found any nice GF pasta yet tho.

Trufree do some fantastic crackers herb and onion and spicy. I tend to buy the herb and onion from Mr.Ts and have it with everything-soup, pate etc. Gorgeouus - i am on a mission to hide them from OH as he nicks them.Otherwise as has been said b4-last nights tea with rice etc. I avoid GF bread as its yuk genrally except for toast. Quinoea and millet are OK0

oh and I have afantastic chocolate cake recipe and an orange cake -if you want it I will post them, let me know. Not that they will cover lunch but nice extras!0

Have bought quite a bit of 'normal' food that I do like and will try to focus on what I can still enjoy and not what I'll miss

I cut out wheat from my diet, and was amazed by the difference. Not waking up to stomach cramps.... fab!!! :j
Rather than putting a sandwich together, put the filling in a tub to eat with some salad, or a baked spud. Tupperware pots are key for transporting lunch bits!
Roast a batch of chicken breasts, when cool, wrap them induvidually and freeze. Take one out to defrost in the fridge the night before work. Slice the chicken to have with rice, salad, or spud.
Try wrapping sandwich fillings in a large lettuce leaf, I really love that.
Homemade flapjacks really take the edge off any deprivation I ever feel! :rotfl:

hi everyone!
not sure if this thread is still active but id like to ask peoples for recipes.
i am new to GF diet but have suffered for over 20 years!
i was told originally that it was gynae and then IBS!
i have cut GF out completely now for 3 weeks and have never felt better!
i know i have to get diagnosed by the gp but i have little or no confidence in them now and it also means i have to eat normal foods again for months until i am biopsied??!! NO THANX!
anyway - please could i have any recipes posible

Hi Kazmeister. This was a couple years ago but it was a recipe on a glutafin fibre mix box - which isn't there anymore! Just checked their website and it's not there either - I might e-mail them to see if I can get it. I need to get more strict with my diet; it's far too easy to eat a chocolate hob nob in work and my kids are getting older now so I've got more time on my hands for baking.Proud to be dealing with my debtsLBM - September 2007Total debt £20,729 :eek:0

Don't know if it will help you guys, but Mr T do some vegetable rice pasta spirals made by Orgran (250g for £1.65) that you may be able to use to make a pasta salad with. I'm not a coeliac, but I cut out wheat from my diet for a detox once and ate these. They taste nice with a tomato based sauce, so maybe just stir in some red pesto for a quick lunch box filler.Enjoy the little things, for one day you may look back and realize they were the big things.I married Moon 8/4/2011, baby boy born 26/9/2012, Angel Baby Poppy born 8/11/15, Rainbow baby boy born 11/2/20170
