Living out of my store cupboard & freezer, how little can I spend to feed my family?

Had BBQ chicken, black eyed peas and quinoa salad (which I think replicates itself when I'm not looking. It is never going to all be eaten!)

Morning everyone. :wave:
It's a new week and for me it is fetching a new challenge, one I've set myself. As I've previously mentioned I haven't had any work since NYE but being at home these past 3 months, I haven't got organised in the way I should have. A bad cough/chest infection took care of January and kids off school and DH working abroad took care of Feb/March.
So, what I have decided is I need the house sorted before I job hunt properly but so I don't procrastinate I have until the end of the week to do it. In the (likely!) event I haven't completed, I can roll over to next week, but I am only allowed 2 'roll-overs' meaning I have between 1-3 weeks maximum, before I have to say job hunting takes precedence. I am going to sort each room according to the flylady thread.
Today is the kitchen, which also gives me reason to go through all the bottles and items we have so I can meal plan round. I've seen this lovely crispy chicken (slimming world recipe) but don't have in 3 of the ingredients, so will put off making that till I've done the next grocery shop. Tonights tea will be hunters chicken with wedges and veg, as I have everything in. I also have in a leek and hoping to make leek and potato soup for tomorrows lunch for me. Now my oven is back working and I can also see about making some bread at long last!0 -
That's great soworried - I am really wanting to stick to the challenge this month, I need to be doing stuff like that, but I really don't. Im going to make some wraps later rather than buy them - just flour and water - never made them before - you have inspired me.
DD made homemade tortillas last night as she fancied something Mexican to use an avocado that had finally ripened. There was an old jar of salsa in the cupboard (it must have come free as I prefer fresh or homemade) but no wraps or tortillas so she made some and then cut them up, seasoned and put in the oven that was already on cooking dinner for me and OH. 75ml warm water
1 tbs extra virgin olive oil
In the end she didn't need all the water so add a bit at a time - and I doubt she put a full tbs of oil in.
mix, knead for 3 mins, rollout. She made 3 tortillas from this. It said to fry in oil but she just dry fried in a non stick pan.

Always dry fry! Your DD is a natural because she made them correctly. :A
I say this from New Mexico USA, where we cook and eat Mexican food as normal everyday food.
In fact, tonight's dinner is chalupas and fideos. Both easy to make. Both from stuff in my stores of food.
I love this cooking out of the food we have on hand thread. It is saving money and decreasing my glut.

I set out all the leftovers last night and said help yourself. My guys did a great job of clearing out most of them and the rest were frozen for future meals.
Haddock tonight that was buried at the back of my freezer. Yes, I can now actually see one side of the back.:T

Ive been trying to batch cook more and always have 'easy' meals to ping in the freezer ready so its meant im using what I've bought any turning in straight into a meal rather than havibg cupboards and freezers full of ingredients then buying something else as I cant be bothered to cook. It has cut my shopping bill in half nearlybthis month and really helped me cler out what I have had stored up as ive been trying to br creative and use what I have in too.Living the simple life0
