pilchards and sardines

I would like to use pilchards and sardines in meals but not sure how.

I know how to use them on toast, but does anyone have any family meal recipe ideas. These would be great as I have noticed that pilchards and sardines (tinned) are both cheap and healthy.

    I often serve heated sardines on top of pasta which has been seasoned with salt and pepper and drizzled with oil...with a salad it makes a good, speedy dinner. The pasta can be seasoned with anything you like...herbs of choice, finely chopped raw onion, few chopped raw tomatoes.

    I have also made pizza bases, spread with tomato ketchup, spread out sardines and quickly baked in hot oven.

  • I saw a really fun-looking idea on "Ready Steady Cook" just recently of a "mini Stargazy Pie" - an individual pilchard/sardine wrapped in pastry, with the head & tail poking out, like in the traditional Cornish version.

    Open tin of sardines in tomato sauce. Pour into dish. Cut fresh bread into chunks. Eat. :D Yummy. (Mrs Molerat gives me disgusted looks when I do this though :rolleyes: )

    I've been Money Tipped!
    My late aunt gave us this recipe. It takes very little work but it is now, and has been for over twenty years, a genuine family favourite.

    Savoury Pie

    Large can pilchards, drained, boned and split into halves along the spine/4 hardboiled eggs,sliced/3 - 4 large tomatoes, sliced/quantity of pastry to line and cover a shallow pie dish.

    Roll out pastry for dish and round for top of pie. Lay in the pilchards, next the eggs and top with the tomatoes. Place pastry lid on top and crimp edges. Make steam vent in top. Bake in oven till pastry is done.

    It is delicious whether eaten hot or cold. Occasionally, friends have borrowed the idea but put the eggs as the top layer. It doesn't work so well as the eggs get dried out and discoloured by the heat of the oven. It's also a great recipe for when you have children 'helping' you. For quickness, I have been known to buy readymade pastry but otherwise you could make double the quantity and freeze half for later use.

    This is one of the recipes in my repertoire that friends and family constantly ask me to bring to get-togethers. If anyone wishes to try it out, I'd be glad of the feedback.
  • Don't forget tinned mackerel, either. It can be hard to find sometimes, but it's also an inexpensive, oily fish. Why not make fishcakes ? Sorry, I don't have a recipe, but I'd mix mashed fish 50/50 with mashed potato, an egg to bind and seasoning, form into fishcakes and fry in hot olive oil. If you'd prefer to use a recipe, there's loads around, just substitute the tinned fish for whatever fish is listed in the ingredients:D

    My kids used to love tinned pilchards on top of boiled rice. It was a great fave during the summer holidays for lunch.

    Pilchard lasagne
    Make a cheese sauce using marg,flour and milk.
    Line dish with soaked pasta sheet.
    layer pilchards in tom sauce(from tin),then some cheese sauce then a sheet of pasta soaked in water. Keep layering and end with a layer of sauce.
    Cook in oven for about 30 mins.Serve with a green veg.

    Sardine or pilchard quiche is nice for a change from bacon.
  • Years ago when we were going through a bit of a hard time financially,I found a recipe in a magazine called Pilchard Pancakes.

    My DS and DD thought it sounded revolting,but my DH said give it a try.

    Open a large tin of pilchards in tomato sauce,mash them up with some of the sauce.
    Make a batch of pancakes to usual recipe,put a quantity of pilchard mixture on each pancake and roll up.
    Lay the pancake rolls in an ovenproof dish,pour over a cheese or white sauce and sprinkle a bit of grated cheese on top.

    Bake at 375 for about 20 minutes or until browned.

    Serve with a green vegetable.

    Against all expectations,we all enjoyed it,children included and I used to make it quite often.
