A very long soggy dog walk yesterday resulted in a very late lunch of soup from freezer stocks and only cheese and biscuits wanted for dinner. That’s another meal from the meal plan to roll over into another week.
Hubby cut up a big bit of wood I’d collected from our little copse and that kept us toasty last night. We’ve been a bit slack in collecting the wood, but I need to get back on top of it now.
Hubby checked our business account last night and another customer has paid, we nearly have enough for the wages and bills at the end of the month now :T

I’ve been to Olympia horse show :T :T :T
It’s been on my bucket list for years and years and it was amazing
We also managed to do it without having to pay extortionate amounts for food or accommodation by planning well.
Everything else has gone well too, there is enough money in the business account for the end of month bills and wages. Only one customer got stroppy about me chasing invoices, although still a fair few still to pay yet.
All Christmas shopping is done, both food and presents.
I want to challenge myself to not do a big food shop in January.

We’ve had very little downtime over the past couple of years, so hopefully a few more days just pottering around the house and stables getting everything in order and plenty of fresh air with the dogs.
I’m also planning to try and source a perfect coleslaw recipe. I’ve never made it before and it never has a very long shelf life, so if I can just find the perfect recipe it will reduce trips needed to the shops!
I’m trying to make use of this time to try some more cheap, batch or leftover recipes to make things easier next year. Next on the list to try is turkey, ham and sweet corn quesadillas.0 -
Glad you had a great Christmas. I always make my own coleslaw using the grater attachment on the food processor. I couldn't tell you a recipe or quantities....it is a bit trial an error and depends what Veggies I have in. I use half mayonnaise/half creme fraiche as it gives it a lighter fresher taste.

With the coleslaw do you use any vinegar? A lot of the recipes I’ve seen use cider vinegar (which I don’t have yet), but we usually have creme fraiche and mayo in so that might be a much better idea! Thank you for sharing0 -
I also use a mix for coleslaw - always mayo - but then sour cream or plain greek yogurt with it. Basically, something creamy but with a slight tartness and lighter consistency - whatever I've got in the fridge and needs using first!
