    I wasn't up to baking yesterday so did some biscuits/cookies this morning while the chicken was in the oven.

    so another rice flour recipe, credit for which must go to Doves Farm who mill all kinds of flours and put a recipe online to go with them.


    PEANUT BUTTER COOKIES

    125g Butter
    175g soft brown sugar
    125g Peanut butter (I used crunchy but I imagine smooth would work too)
    1 Egg
    1 tsp Baking Powder
    175g Rice flour

    Cream the butter and sugar together then beat in the peanut butter and egg.
    mix in the baking powder and flour.
    roll teaspoons of the mix into small balls and place on an oiled baking tray (or baking paper). Flatten with a fork.
    Bake at Gas 4/180C or 350F for about 15 - 20 minutes.
    the cookies will be soft on coming out of the oven but crisp up when cold.

    These are delicious!!! I give them *****!
    the recipe makes about 35 to 40 small cookies. apparently they keep well in an airtight tin - but I don't think they will last long enough to get stale!

    Make do: we have a coffee machine which grinds beans, and dh found beans on sale on tinternet, so he bought 10 1kg bags... They are awful! I did not want to throw them away, so I bought a bag of quality espresso beans, and now we mix about 1/4 espresso to 3/4 cheap beans and it gives us a decent coffee. Only eight bags to go!
    The machine is M.edion brand (al.di) and has its own story. Dh found it new on tinternet on sale for €80. After about a month I broke the pot, and m.edion took my order for a replacement, but stated I had to wait until more people had ordered a replacement pot berore they would/could fill the order. Then, the heating mechanism stopped working. We sent the machine to the service station, free of charge; it was examined, and they sent us a new machine, free, including pot! Full marks for that part of their customer service!

    Thanks for the peanut butter cookies recipe meritaten, love these cookies but haven't had them since I went gluten free so will definitely be trying these at some point during the week.

    Just back from a lovely weekend with my family, came back with a bag full of eggs from the hens, veggies from the garden, local cheeses and gluten free goodies :D so will incorporate those into our meals this week.

    Morning all
    Minimised 4 box files of paper over the weekend so loads of recycling out, dd2 took the tee shirt throw home I made her so that's left our house.
    Made a plait for rapunzels tower in the book corner of our classroom so that's going to school today.
    Tonight will be making do with something from the cupboards for tea.
    Read another book but saving it till I see my mum then she can have it, but started another and wasn't really enjoying it so it's gone in the charity bag.
    A big box of ornaments went to the CS on Saturday.

    Starting to feel a bit less cluttered.
    Hope everyone is well, I'll catch up later as busy all day today.

    Iris violet - welcome back. I certainly found since joining last years thread regularly popping on the thread and posting kept me ontrack and inspired! Special thanks to GQ; Jackie O; Nurse Maggie; Vulpix; Valhalla; Nurse Maggie; and so many others!!
    Also, one of the big things that I learnt was to factor in treats - such as Jackie Os 'Happy Stash' idea or a treat of the week (cant remember who had that idea - sorry!).
    Double also ( :D ) forgive yourself if you slip up quickly and get back o the programme!!
    For me - I had a brilliant Sunday - my good friend has given me his 3 year old smart phone - first one I have ever had!! awesome !! and just so kind! He says it makes him feel less guilty at being part of the Consumer society and wrecking the Earth! He and his wife also invited me for Sunday lunch - which was fab!! I have nt been so spoilt for years. Bless them :D I just feel so lucky.
    This will enable me to get a sim only deal which will give me some savings this year (about £10 to £15 per month = £180 per year potentially - WOW that's huge!!!)

    So is that a make do??? :o
    Mend - flippin wardrobe door handle - its bin annoying me for ages and cos I gotta report on here I finally got round to doing it!! :D
    Minimise - does choccy cake count?? :rotfl: Sunday eve I spent showing one of my young friends how to cook - a quick lesson in spag bol; burgers; choccy victoria sponge; almond biscuits!! Was v fun and he really enjoyed it! He is going to eat them over several days so has meals for 5 days + cake for the week for a cost of £7. He was well impressed with the economy aspect of these!!

    Also ta for the peanut butter cookies recipe - no rice flour at mo but they sound lovely and I will make em once Ive moved! :D

    Morning all
    Made a cauliflower and broccoli cheese bake for tea last night it was lovely. Still have another YS cauli so it will be made again later in the week.
    Started another little prem hat last night while watching tv.
    This morning I'll be decluttering my roots and split ends then nip down shop to get replacement security light as ours needs replacing.

    The seeds I've planted at school have started sprouting so I'm hoping to get some gardening done with the kiddies next week. The flower bed is all planted out but not started the veggies yet as A. Need more compost B. Weather still seems too cold. I did pick up a cheap archway from wilko at the weekend and built that after school and put it in the veg bed for the peas and beans to grow up.

    Lovely post Lyn, there are so many things I love about this thread.

    Hello MMMer's back in action I've had a bug and it n
    Knocked me for 6 been in bed for 2 days and off it for a further 2.
    It's snowing here but I did managed to get DD her washing done and dried this morning. Been making do with food out f the freezer for the last 2 weeks. I did manage to go shopping Saturday night after DH had finished watching the footie. I got loads of bread items from MrT's all at 2or3p packs of wholemeal bread cakes, pitta bread and crumpets and pains au chocolat which will keep us going for the next month or so. I also got 6 packs of stir fried veg for 10p each they are in the freezer too, I did use one yesterday with some chilli noodles I also got YS at 3p so we had a nice stir fry and noddles for 13p just added some extra sweet chilli sauce. I'm going to use some of the pitta bread as pizza bases, some will be used with curry and some filled with salad stuff on days out. I had to get DD a bottle of lucozade last night on the way home and I got a £2 off voucher at the coop off meat no minimum spend so will pop in tonight and see if they have any rtc meat and make the mist if the voucher..

    Last night for tea we had egg and chips which used a couple of eggs I bought back, tonight was a YS pork joint with roasties (using up some tatties that had began to sprout) and veg from my dad's garden. The rest of the pork has been sliced and frozen for a later date. I'm working later tomorrow so have taken out some curry that I batch cooked a while ago and OH will cook the rice for me coming home.

    A question for any DIYers out there - one of the tiles in the kitchen has gotten chipped and I'd like to try and repair it, any ideas on what is best to use?

    Morning mmmers, hope everyone is as well as can be.
    Woke to frost this morning after yesterday's snow so glad I hadn't put the veggies out.
    Spent yesterday minimising and sorting photos, got rid of a load of old ratty photo albums and transferred their contents to one new slip album. So much neater.
    Outside security light has been replaced so old one has been recycled.
    Dh will be having left over lasagne for his lunch today.
    Haven't got any mending at the mo.

    Will catch up later.
