Chard - help need recipes!!

    no no no no - please don't compost it!

    You have grown it, what better excuse is there to try loads of new recipes? I suggested three earlier (the chard and potato gratin really is delish - we are having it for tea tonight), Joolz has suggested one that sounds very tasty (and I will give a spin in a day or two). If after all these experiments, you still aren't keen, then just don't grow it again!

    chard with the cream is beautiful, I was nicely suprised. Peopl do use it raw in salads too, I have seen it in mixed bags at the supermarket

    Thanks all - I will try out these recipes - as for chucking it out/composting - well i would never do that as this is my first proper year of veg growing so if i aint eating it I want to frame it. i actually had the leftovers of what I cooked last night in a bubble and squeak - yum. The stalky bits taste like spinach too so it means that I'm not having to watch a bushel of spinach leaves wilt to the size of a teaspoon. If I use these recipes will the stalks retain some of their colour?

    To create a chard and potato gratin - I use as a vegi main course (4 portions), but could easily be a side dish (6 portions)..

    ingredients: 400g chard, 400g pots, olive tapenade, 2oz cheddar, 1oz parmesan.

    do the above to the chard.
    cook (until just soft) pots, ideally new pots. slice when cool enough
    oil a dish (mine is 5"x8").
    layer the ingredients - pots, tapenade, chard, tapenade, pots, tapenade, chard.
    grate the two cheeses together, put on the top.
    cook at 200 for 25 mins.

    I tried this earlier this evening as got a big bag of chard in my veg box and never had it before. I knew that if I looked hard enough, someone on this board would have a recipe - thanks Angie, it was lovely! My 3 year old DD loved it too.

    I separate the stems and leaf, cut the stems into inch long bits, boil them in a drop of water in the pan (I nearly put 'in the bottom of the pan as if it could go anywhere else ... doh!).

    After about five or six mins it should be softening up, let the water evaporate or chuck it out, keep for soup or gravy? Then put the torn up washed leaves in and put the lid on. Shake the pan from time to time. It takes about 5 - 10 minutes depending on how much there is.

    I adore chard. First met it in New Zealand where the call the ordinary green stuff 'silver beet'. I've got the red stuff, still babies, on the allotment. If you pick off the ouside leaves they should crop through a mild winter.

    It goes well with hard boiled eggs, cover with the chard and then with cheese sauce. You can put a layer of tomatoes on top - or not - and sprinkle with cheese, pop in the oven if you're cooking from cold or under the grill if you're making it fresh, to brown off.

    It also makes a good frittata. Fry onions, put the cooked chard on top, pour over beaten eggs, add a layer of tomatoes and sprinkle with cheese. Gently shake the pan to get the egg through the veg. Cook gently till looking nearly set then pop under the grill to finish cooking and brown. Great - and cheap!

    I'm just off to make a cheese and lentil loaf, first time!

    I just want to say thanks all of you for the brilliant recipes and ideas. The chard is lovely and growing in such abundance that we are eating it nearly every day - yum

    Not posted for a while - been mega busy trying to get ready for the start of the new term in 3 weeks :rolleyes:

    I got some Chard in my veg box this week and need to use it up today... Anyone got any nice recipes??? Was thinking of something with chicken?? :confused:

  • Chard is subsitutable for spinach in any recipe if that helps.. It has a particular affinity with potatoes and with cheese.

    It is delicious cooked as a gratin - steam then add cheese sauce and bake...
