Apologies, mum used to call her jam one bread pudding to distinguish it from the fruit one. *must learn to read what people put and not what I think they put*
  • Hee hee, have you ever called a dish something because that's how you were brought up, when nobody else has ever heard of it? We used to have camel's eyes and nobody knew what we meant! ;) (bread with hole cut in the centre, egg broken in the middle and fried, with the 'hole' put back afterwards) :D

Alfietinker I don't actually have a receipe. Its just as Mum makes it and its by eye. I know no help to you but I'll give it a go.

Soak the bread in milk (uncut bread works best)
    demerara sugar
    currents/ sultanas/ mixed peel
    suet
    1 egg
    treacle to darken.
    mixed spice

I would at a guess say half a stale loaf
2tbsp milk enough to soak the bread
    1tbsp sugar and suet
2 tbsp everything else .(except peel add to personal taste. I hate peel :( )
    2tsp mixed spice
    1 egg beaten

soak bread then mix in all the ingredients with a fork.

Put the mixture into a baking tin and cook for about 40ish minutes at 180oC. Check it regularly.

:o Sorry its abit vague but once you've tried it you can tweak it.

(It looks like the suet is the replacemant for the fat part of cake making and the bread for flour.)

Does anyone have a recipe for bread pudding. Have lost my faithful one with the quantities on.

    I remember it including:

    bread
    milk
    suet
    eggs
    demerara sugar
    mixed fruit
spices (cinnamon or mixed spice - can't remember!)

Any help would be most appreciated, especially by husband;) :rotfl:

    Hi evilwitch,

    This older thread might help:

    Bread Pudding-How??

I'll merge your thread with that one later to keep all the recipes together.

    Here's the one I use:

    8oz/225g Stale bread
    1/2 pint or 300g milk
    4-6oz/100-150g sugar
    4-6oz/100-150g mixed dried fruit
    2oz/50g butter (nicer than marg)
    1 egg
    1-2 tsp mixed spice
    pinch grated nutmeg

    Method:
Break bread into small pieces, put in mixing bowl cover with milk. Stir well, leave to soak for about 30 minutes till all milk soaked up.
Heat oven to 180 degrees /gas 4-5. Well grease a two and a half pint pie dish.
Add dried fruit, sugar, butter, spice and egg, and squish it all with your fingers till thouruoghly mixed.
Put in tin. Bake for 50 -60 minutes.

    Hope this helps!

Hubby loves bread pudding and makes them every so often. He doesn't measure anything, just throws it all together and bungs it in the oven. I find that it's a bit too heavy and solid. Does anyone have any tips to make it lighter or fluffier please. This was his latest effort

  • Can anyone give me a recipe for a bread pudding? I mean a dark one with dried fruit rather than a bread and butter type. My mother-in-law (no longer with us) used to make a wonderful bread pudding and I know vaguely what went in it but no idea how much of each ingredient. She used to soak the bread, wring it out and add butter, dried fruit, spice, sugar etc.

    Many thanks in anticipation.
