Does anyone have a recipe for bread pudding, or similar, which is savoury? I seem to remember my Mum making something along these lines but can't remember what0

I have made my 2nd ever bread pudding today. the first one was assessed by friends and family as having 'hardly any fruit in it' and 'not enough spice'.
So today I have put loads of fruit in it and what I think is loads of spice, but (just about to put it in the oven), it still looks fairly pale.
Is it supposed to look dark before it goes in the oven, or does that happen when its cooking?
Are you supposed to put eggs in it? I couldnt remember what I did last time and couldnt be bothered to find out, so I put all the bread in with some milk, waited for the bread to soften up (nearly all day as v stale), then mashed it, then put in fruit, loads of teaspoons of spice, then thought it looked like it could do with some eggs, then about a table spoon of sugar (dont like things too sweet). mashed it again and now waiting for oven to pre heat.
Doesnt smell that spicey though??
another query - is it possible to make a savoury bread pudding and if so, how would you do it?
for the absence of confusion I am talking about bread pudding, not bread and butter pudding
thanks!0 -
Hi When I make bread pudding, I rinse the bread in a colander and squeeze it out, then bung in some suet, sugar, spice lots of fruit and one egg. Then when it comes out of the oven I sprinkle some sugar on the top.
Mine looks a bit pale when it goes in. Use brown bread! lol!0 -
Have you used any suet?

Not sure about a savoury pudding but this is the recipe that I use for bread pudding

The colour of the pudding depends on the whether you're using white or brown bread to a certain extent. I add eggs and melted margarine, only soak in water and sprinkle with the top with demerara sugar half way through cooking!
Another idea for stale bread is to make it into crumbs then freeze for use in stuffing, meat balls, or as i did this week...a lovely crunchy topping for cauliflower cheese!
