    I used to make a pudding many years ago - think it was called queen of puddings - which is like your bread and butter pudding but the bread is made into breadcrumbs mixed with egg, sugar, milk then baked - once it was set I spread it with jam and then put a meringue mix on the top and stuck it back in the oven until the meringue had set. I used the egg yolks from making the meringue in the bread pudding bit! Sorry not very good at describing it!! JUst another thought to use oup your jam.

    Must have been over 20 years since I made that - think I will give it a go next weekend

  • Hi Guys!

    I know I posted a basic bread pudding recipes the dry bread pudding not the wet bread and butter ones!!

    Please help. We have lots of bread that need using today as its gonna turn soon.

    I know it need to be soaked in water, then all water drained after it has soaked in, but cannot remember the rest.

    Please point me in the right direction. Im sure it has no eggs in it either. Was a real old basic bread pudding recipe that was used in the war times when they had to ration.

    Soaking bread in water and squeezing out excess
    Adding dried fruit, walnuts and figs all chopped
    No flour
    1 egg
    Sugar
    Cinnamon and nutmeg

    In oven atm, so will see how it turns.

    Sounds about right, penny-pincher. With my mum's recipe we soak the bread in milk, but the rest is as you've described it :) It goes in the oven at 180 degrees/gas 4 for about an hour I think.
  • I used to make BP from left over bread when I managed a cafe - my recipe was to soak bread in hot milk & water, really mix it well to dissolve crusts, bung in a bit of brown sugar, butter, dried fruits, mixed sweet spice and an egg. Bake at 180c & when out of the oven & still a bit warm, sprinkle with castor sugar. Used to sell really well!
